These look SO fancy but are SO easy to make in a muffin pan! Make the batter ahead, and throw this in the oven as you sit down to eat.
MOLTEN CHOCOLATE LAVA CAKES
½ C. butter, unsalted
4 oz. bittersweet chocolate
2 eggs
2 egg yolks
¼ C. sugar
2 Tbsp. all-purpose flour
Butter and flour custard cups or specialty molds. Preheat oven to 450ºF. Melt the butter and chocolate, but do not let it boil. Remove from heat and set aside. Beat together the 2 eggs plus 2 yolks and the sugar, until it's light and thick... about 5 minutes. Pour the now tepid chocolate mixture into the egg mixture, and beat to mix. Quickly beat in the flour until just mixed in. Pour into the custard cups. (At this point you can refrigerate for up to 24 hours. If you refrigerate, let return to room temp before you bake.) Put custard cups on a baking sheet and bake at 450ºF for 6-7 minutes. The outside will be set up, but the top may still be slightly wiggly. Invert on plate, let sit for 10 seconds or so, remove custard cup. Sprinkle with powdered sugar, and surround with a raspberry sauce or add a scoop of ice cream or real whipped cream on the side -- your choice.

Luscious Lemon Cake
One purchased angel food cake, 1- 8 oz block of cream cheese, 1 tub lemon frosting, 1 & 1/2 c cool whip, 1 can lemon pie filling.
Slice the cake into 3 even horizontal layers.
In a mixing bowl, beat the cream cheese and the pie filling until smooth. Spread half over the bottom layer of cake, place 2nd layer over that. Put remainder of filling atop layer 2., then replace top layer.
Beat the frosting and the cool whip until smooth, and frost entire cake.
My sister invented this cake and it IS "to die for"!!

Rhubarb Raspberry Cream Dessert recipe
Crust
1 cup Tillamook butter, softened
2 cups all-purpose flour
3 tablespoons powdered sugar
Filling
6 large eggs
2 cups granulated sugar
1 cup whole cream or half-and-half
4 tablespoons all- purpose flour
5 cups fresh diced young rhubarb
1 cup fresh raspberries
Meringue topping
6 large egg whites
3 tablespoons granulated sugar
1 tablespoon vanilla extract
Make crust: Mix butter, flour and sugar; press into large oblong glass cake pan. Bake at 350 degrees F for 10 to 12 minutes. Remove from oven and let cool.
Make filling: In the meantime, mix eggs, sugar, half-and-half, flour, and rhubarb until thoroughly blended. Fold in raspberries lightly and pour over baked crust. Bake for approximately 45 to 55 minutes or until center is set.
Make meringue topping Beat egg whites until stiff. Add sugar and vanilla extract and mix for 1 or 2 minutes until well blended. Spread over creamy rhubarb filling and bake until lightly browned - approximately 5 minutes at 350 degrees F. Top with large scoop of Tillamook Vanilla ice cream.

Better than sex cake.(Sweetie,i altered some of the ingredients,and the portions of them as i baked the cake in two different pie pans(aluminum).I made two,and these are the ingredients for one.One cake mix,will make two.Hope they enjoy it.
1 Chocolate Cake Baked( I used Yellow,and prepared from a box)
3/4 Cup Fudge Topping
3/4 cup caramel topping(You can use butterscotch but the caramel is best)and its the kind you get for like ice cream same for the fudge topping.
3/4 cup sweetened condensed milk
butterfinger candy bars(some use toffee bars,that is ok but i liked it with butterfinger).
1 tub of cool whip(Use half per cake,depending on how much you like cool whip)
a hand full of flaked coconut(Optional)
After the cake has cooked from baking it poke holes in the top of it with a fork or the handle of a wooden spoon(i like to use a bigger fork). pour the fudge on top of the cake (I like to heat mine before i do it).Let that soak in a bit,then pour the caramel sauce(i like to heat this also) let that soak in a bit as well.Then pour the condensed milk over the top of the cake letting that soak in as well.crush half of the candy bars( i used three,so i used 1 1/2 for this part),and sprinkled them over the cake.Then sprinkle the coconut over that.Next spread the coolwhip over top and finished it off by sprinkling the remaining candy bars.
