For the blind part do not move the furniture and keep her in one room or a smaller area until she learns to find her way around the house. She will slow down and learn to listen to you for clues about things she is going to run into. I use the word Whoa for my blind guy he knows it means stop and trun or you are going to hit something.
As for the deaf part they make shock collars that have a vibrate feature so the you can stimulate the dog with out a shock and get their attention. They work wonderfully. I highly recommend a shock collar for a deaf dog as even if you do shock them it does not hurt but it does get their attention right now and can stop them from getting hurt.

There are deaf/blind dog trainers, but they are kind of pricey.

Just for general issues, my vet recommends not rearranging any furniture in your house. The dog gets use to a certain pattern in the house and when it gets messed up, it sends the dog in a confussed, aggravated state.

On another note, I think it's awesome that you have chose to take in such a challenge. Good luck with it all. there aren't alot of people out there like you!

Spray bottles work for some dogs. When she does something you don't like just give a little squirt of water and it usually deters them.
