A door will keep the heat in or the air conditioning in, so that's one reason they need a door, even if they are open 24 hours a day. If the business ever goes "out of business", they'll need to lock the doors. Some businesses are open 24 hours a day most of the year, but will close for Christmas and Thanksgiving. If a crime were committed in the store, they'd need to be able to close off the crime scene. Nothing is permanent. Some businesses try the "open 24 hours" and later decide that being open during certain hours does not generate enough income to pay the staff, so they scale back the hours.
