Very Simple Fried Chicken:

1½ hours 30 min prep
4-6 servings 1 chicken

1 cut-up fryer
1 cup potatoe buds brand instant mashed potatoes
1 cup all-purpose flour
1/2 teaspoon ground black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
2 eggs
1/2 cup milk
3/4 cup canola oil

1. Begin to warm the cooking oil in a 10 inch frying skillet, add oil to cover the bottom of the skillet.
2. Mix dry ingredients on a plate to roll the cut pieces of chicken into.
3. Whisk the 2 eggs and milk, dip the chicken pieces into the egg/milk mixture, then dredge the pieces in dry mixture by roling them in the mix to thoroughly coat each piece.
4. "Quick fry" the chicken on all sides to crisp the outside to a light to medium browness then lay on a large baking sheet at even spacing between pieces, mix the sizes evenly also.
5. Bake uncovered in the oven at 375 degrees for about an hour (until juices run clear when you pierce a piece with a fork).
6. When you take the sheet out, let the chicken cool for a few minutes before serving.
7. Hint: You can also put the dry ingredients into a 1 gallon ziploc freezer bag to "shake" then fry.
8. I list ingredients per chicken so you can adjust for your family needs.

Easy way- mix a few cups of flour together with pinches of your favorite spices, such a paprika. Put chicken in a zip- lock bag. Add flour mixture and coat chicken evenly. Put bag in fridge and let sit for at least an hour.

Heat 2-3 inches of canola oil in a 10-12 inch pan until it reaches about 350 degress (medium heat.) Cook chicken for 7-8 minutes on each side, depending on how thick the pieces are and if they have bones. It could take more time, or less. Chicken is done when the juices run clear after poking into it, and no pink is visible.

Okay, here is goes, very simple. First, I recommend using a deep fryer, if not a good deep pan. Soak your chicken in buttermilk over night, or at least a few hours. Then bread each piece in flour mixed with various seasonings, such a Lawry's Seasoning Salt, and pepper. Make sure the oil is VERY hot before you add the chicken, and of course place the chicken in paper towels to drain excess grease. You may want to try this with smaller pieces first. The buttermilk is not something you will taste, is just seals in the juice, so the outside is very crispy, and the inside is not dry. Good luck! infamizvenus@sbcglobal.net, if you still need help

EASY SPICY SOUTHERN FRIED CHICKEN
Serves: 4 Prep.Time: 45 minutes

1 frying chicken, cut up
3/4 cup Louisiana hot pepper sauce
1 teaspoon black pepper
1 teaspoon seasoned salt (I used Lawry's)
1 teaspoon poultry seasoning
2 1/2 cups all-purpose flour
Wesson vegetable oil (of course) for frying

Wash chicken pieces under cold running water; pat dry with paper towels. Place chicken in a large sealable plastic bag or a large non-reactive bowl. In a small bowl, combine hot pepper sauce, pepper, seasoned salt and poultry seasoning; pour over chicken and toss to coat well. Seal bag or cover bowl tightly; refrigerate 6-8 hours or overnight, turning chicken pieces occasionally.
Place flour in a paper or plastic bag. Heat oil to about 340 degrees in large deep cast-iron skillet to 1/2 the depth of the pan. Remove chicken pieces one at a time and dredge in flour until well-coated. Fry chicken pieces skin side down, a few at a time so as not to crowd, 10-14 minutes; turn and fry 12-15 minutes. Drain on paper towels before serving.

GENUINE SOUTHERN FRIED CHICKEN

3 1/2 pounds chicken, cut up
3 teaspoons salt, divided
1/4 cup butter
3/4 cup all-purpose flour
1/2 teaspoon fresh ground pepper
vegetable oil

Sprinkle chicken with 2 teaspoons salt. Place on platter, cover with wax paper and refrigerate 4 hours or overnight. Pour 1 inch oil into large, deep, heavy skillet. Add butter and heat over medium-high heat to 375 F.
Meanwhile, rinse chicken under cold water. Place flour, remaining 1 teaspoon salt and the pepper in paper bag; shake well. Add half the chicken; shake to coat well. Shake off excess flour. Repeat with remaining chicken. Add chicken to skillet in single layer so pieces do not touch. (If necessary, cook in batches. Keep cooked pieces warm in 200 F. oven.) Cook until evenly golden brown on both sides, turning once, about 15 minutes. Drain well on paper towels. Serve hot.

if i read your question correctly, you are looking for something simple,not a long dragged out process. well you can just roll chicken in flour and fry in an electric frying pan, using Crisco. as simple as it gets, but messy. for no mess, no fuss, get some "Kraft oven fry" mix for chicken. from the makers of "shake & bake". this comes out just like fried chicken, only with out the mess. they say not to turn it over but i do half way through the cooking time. i use a foil lined tray sprayed with pam cooking spray.(makes clean-up a snap). pop it the toaster oven or reg.oven at 350 for 45 min or so. this is as good as any fried chicken i've ever made. i have used all sorts of coatings, crushed corn flakes, potato buds, itailian bread crumbs,frosted flakes,rice crispies,chicken-n-bisket crackers.................what ever ya got laying around. for some tradional recipes, go to www.allrecipes.com

there's a few ways to do it...the easiet way would probably be to buy a box of Fryin' Magic (powder you coat the chicken with) and follow the instructions on the box.

for a crispier chicken: Place chicken in pan with water, salt and pepper. Simmer until tender. Drain and refrigerate until ready to use. Mix: 1 tsp. baking powder 1 tsp. salt Pepper to taste
Add 1 egg mixed with 1 cup milk. Mix well. Dip each piece of chicken in the batter and deep fry about 5 minutes at 375 degrees or until golden brown.

A restaurant style fried chicken recipe.
INGREDIENTS:

* 3 to 4 pounds chicken pieces
* 3 cups self-rising flour
* 1 cup cornstarch
* 3 tablespoons seasoned salt
* 2 tablespoons paprika
* 1 teaspoon baking soda
* 1 package dry Italian salad dressing mix
* 1 envelope (1/2 ounce) spaghetti sauce mix
* 1 package (1 1/2 ounces) onion soup mix
* 3 tablespoons sugar
* 3 cups corn flakes, crush slightly
* 2 eggs, well beaten
* 1/4 cup cold water

PREPARATION:
Wash chicken and pat dry. In a large bowl, combine flour, cornstarch, seasoned salt, paprika, baking soda, salad dressing mix, onion soup mix, spaghetti sauce mix, and sugar. Put corn flakes into another bowl.
In another bowl, whisk together the eggs and water. Pour 1 inch of oil into a deep heavy skillet. Heat over medium heat to about 360°. Grease a 9x12x2 baking pan and set aside. Preheat oven to 350°.
Dip chicken pieces into dry coating mix, then into the egg mixure, then into corn flakes, and briefly back into the first coating mixture
Carefully place chicken into hot oil, skin-side-down; brown 3 to 4 minutes on each side. Don't crowd chicken during frying. Place chicken in the prepared pan in single layer, skin-side-up. Cover baking pan with foil, leaving 1 side a little loose for steam to escape. Bake at 350° for about 40 minutes. Remove foil and check for doneness. Chicken should be tender and juices should run clear when pierced with a fork.
Bake uncovered 5 to 10 minutes longer to crisp the coating.
Serves 4 to 6, depending on chicken pieces used.

True pan fried chicken cannot be learned by recipe, only by watching my mom and lots of practice. Nonetheless, this should get you started.

Cut one fryer (small chicken) into parts. Wash. While wet, dip each piece into flour.

Preheat cast iron skillet to med high with about 3/4 inch of melted Crisco or lard.

When hot, drop each piece into the pan. Brown on each side, this should take about ten minutes. Salt and pepper. Cover the pan and lower heat to med low. Watch closely and turn as necessary while chicken simmers for about 30 or 40 minutes. Salt and pepper again. Remove the cover and return heat to med high or high. Get the chicken as crispy as possible without burning. Remove and soak on paper towels.

Serve with biscuits and lots of napkins. Enjoy.
