I generally cook in bulk and spend about $1.- per person per meal. The main thing you'll need to do is cook from scratch. Prepared foods are convenient and pricey because of that convenience.

Get a whole plump chicken, remove anything from the body cavity (sometimes they put the neck or the gizzards in there in a packet) and put the bird into the slow cooker -- or on the stove to simmer in a large pot. Season to taste. y favorite combo is salt-pepper-onion-garlic. You can go anywhere with those four. Use the meat for two meals. As it's cooking, throw in some quartered veggies like carrots, potatoes, an onion, and even a clove or two of garlic, slit or halved.

The first meal from this chicken could simply be stewed chicken. Serve half the chicken on a nice platter with the veggies around it. The second meal could be a nice casserole of some kind, spaghetti, or even tacos or fajitas.

If it's good soup weather where you live, add some barley or noodles and make soup for your second meal. Whip up a batch of biscuits to go with the soup and your husband will never notice the leftovers. The aroma of baking bread does that to a male mind sometimes, especially a hungry male mind.

If you need a recipe for the biscuits, go to www.cooks.com. They have lots of good recipes. Because they're submitted by people who like them, these recipes all work. They're generally easy to follow, too. If you need further instructions on any of the other stuff, email me by clicking on the name under my avatar. The chicken suggestions would also work with a good-sized pot roast of beef, too.

Glad you asked. Here's an inexpensive and very tasty main dish; it's called "Chicken Apricot".
Ingredients:
1 package of Chicken Tenders (about six or so in the pack).
1 jar of the thick Thousand Island Dressing found in the produce section (not the liquidy stuff with all the other salad dressings)
1 small jar of Apricot Preserves
1 package of Lipton Onion Soup Mix
1 small package of Pepperidge Farm Stuffing mix.
Directions:
Prepare the stuffing per the directions on the package.
Place the stuffing evenly in a small roasting pan.
Place the chicken tenders on top of the stuffing.
Mix the Apricot Preserves, half a bag of the Onion Soup mix, and half of the Thousand Island dressing in a bowl, and then pour over the chicken and stuffing. Seal tightly with aluminun foil, and place in a 325 degree oven for about 50 minutes.
When done, remove the foil and enjoy the entree. (Of course you can add a side vegetable if you want).

I assume for two people. Rice is cheap and depending where you shop, Chicken on sale.

1. Mushroom Chicken with White Rice
Boil/steam a whole Chicken (Cut up Chicken), when finish, drain most of the water (about 1 to 1 1/2 cup of liquid) add two a can of Mushroom and mix until incorporated to the Chicken.

Cook rice separate.

Top rice with chicken and rice.

2. Tuna Mac - College Food - Cook the box of macoroni as directed. Throw in a can of Tuna when almost finish.

3. Chicken Quesadillas. Cheese, chicken, and tortillas. Toast tortillas, add Shred cheese, cooked chicken (perfect for left overs). Fold. Melt cheese.

How about chicken cordon bleu? It takes 2-4 boneless chicken breasts pounded thin. Four tiny slices of ham and some swiss cheese or any white cheese will do. Place 1 pc. of ham on chicken and top with cheese, roll up and secure with toothpicks. Beat 1 egg and dip chicken in, then roll it in bread crumbs and fry or bake. When serving add lemon juice to the outside, really nice contrast of flavor! Very simple dish for the price we pay in a restaurant! Any side dish will go with this.

I would make a salad and a pasta. For example, angel hair pasta and a sauce made from a small can of diced tomatoes, basil, garlic, oregano, a few pitted kalamata olives from a supermarket salad bar, some crushed red pepper.

Sweetie, any pasta dish is going to be under 10 dollars.Rice and beans as well, will again be under 10 dollars. Here are a couple recipes:

One can of drained black beans
One packet of taco seasoning
Sour cream
Rice(Spanish rice works well with this, but it can be plain white or brown.)
Drain black beans, mix taco seasoning with sour cream, cook your rice.To plate, make a bed of rice, layer black beans, top with sour cream mixture and a sprig of parsley. You can add meats to this as well, instead of adding the taco seasoning to sour cream, add it to a meat of your choice.I have done this without the meat,as i do not eat meat and it was delicious. It is very affordable and very filling.

Make the whole package of rice, and if you have leftovers use it in the next meal.

Patatoe bake-

Red skin patatoes
about three tablespoons of butter
Cheese,i prefer cheddar
broccoli florets
3/4 cup of cream
Optional:If you have rice left over from previous dish, add it into this If you dont,do not worry make just as is..Boil your patatoes, just before fork tender.Do not worry about this, they will continue to cook as your going to be baking it.Grease a pan with one tablespoon of the butter.pour cream, cheese and broccoli and mix.Layer your patatoes into the pan and spread them out evenly.top with bread crumbs or cracker crumbs, look in your pantry and see what is left dont rush to the store to purchase more break up butter over cracker crumbs,if all else fails just cover and bake.Bake, until a cheesy sauce forms.Just before it is finished add a little more cheese to the top and uncover.Bake until cheese is golden. It isnt rocket science, and the measurements do not have to be exact.

If you have left overs from that, add it to this next dish.

Cheesy Patato Soup

(Here are the ingredients in case you do not have left overs)
6 tablespoons unsalted butter
1 1/2 cups chopped onions
1 1/2 cups chopped celery
4 cups water
8 potatoes, peeled and cubed
15 slices American cheese - broken into pieces
4 tablespoons all-purpose flour
2 1/3 cups milk

Melt the butter in a large pot over medium heat. Saute the onions and celery in the butter for 5 to 10 minutes, or until tender.
Stir in the water and potatoes, bring to a boil and then simmer until the potatoes are tender. Add the cheese and stir until melted.
In a separate small bowl, combine the flour and the milk and stir well until the flour is mostly dissolved. Pour this into the soup slowly, stirring constantly, until soup has thickened, about 5 minutes.

If you have left overs add them to a pot,and heat.In a seperate pan sautee some onions and celery in some butter until they are clear.Add this to the patatoes and also add some milk or cream to cover.Bring to a boil, and you can serve this as is,or blend it in the blender and make a "smooth" soup.

(This is one of my favorites)
One box penne pasta
One can of diced tomatoes
One can of tomato puree
Basil
Mozzarella cheese
Parmesan cheese

Cook your pasta to desired bite.In a casserole dish sprayed with cooking spray place pasta.Add tomatoes, and tomato puree and basil(Tip:If you do not have fresh basil, simply take dried and add some oil, just enough to moisten and add it to the pan, although you will have to use a little more dried than fresh).Mix pasta, tomatoes, puree, and basil until combined.Top with parmesan cheese, and mix in as well.Add mozzarella cheese, bake until cheese is melted and dish is heated through.Turn on broiler, just before removal for cheese to golden.

The cheapest way to eat,is simply make dishes, and plan ahead.Make dishes that the leftovers can be used with just a few new ingredients the next day,to make something new. This will help keep your budget and save money. Not to mention, help you practice ways to make new things, and give you a chance to try new things.Never be afraid to use ingredients that it doesnt call for,if it sounds good to you, more than likely it will be good.Good luck hun,and have a good night.
