Place a couple of cloves of garlic, slit or halved, along with some chunks of raw onion into the cavity. Wrap the whole thing in foil and roast. Remove or open the top of the foil for the last 15-20 minutes so the chicken will brown nicely. If you prefer the white meat juicier, roast the bird with the breast side down.

If you roast it in a baking bag it will stay moist. It is delicious when you smear rosemary all over it before you put it in the oven as well. 20 mn/lb @ 350 sounds about right, but just use a meat thermometer to be sure it's done. Happy eating!
