Crack individually into a cup , before adding one at a time, too your recipe / dish / frying pan. Nothing worse than cracking the last egg into your cake mix etc only to find its bad, and have to throw the entire miv in the bin.Too find out without cracking the egg There is a small air pocket in the large end of the egg. When the egg is fresh, the pocket is only about 1/8th of an inch deep and as large around as a dime. As the egg ages, however, it loses both moisture and carbon dioxide — shrinking — so that the size of the air space increases. And the size of the air space determines the buoyancy of the egg.
So if you submerge a very fresh egg in water, it will lie on the bottom. An egg that is a week or so old will lie on the bottom but bob slightly. An egg that is three weeks or so old will balance on its small end, with the large end reaching for the sky. And a bad egg will float.

The first thing you should do is to check the experation date, don't use the eggs for cooking if they date had expired,
(even if the exp. date is valid the eggs may be bad) so The 2nd thing u should do is crack the egg properly or the best u can, if the white and yellow mix, its bad/rotten, if they don't mix its fine to use, also make sure to crack them open PROPERLY...
also one other way 2 know is put the egg in a glass of water if it sinks its bad if it floats its good.. this should be your last option
anyways good luck & i hope i helped =) o.O
pro baker i use eggs a lot trust me lol.

A good idea is to check for the expiration date.
Another method is to put the eggs in a glass of water. If the egg floats to the top, it's good. If it drops to the bottom or floats near the bottom, toss it.
