Coca-Cola Cake
This cake is unbelievably good and sure to go straight to the hips; nevertheless, as you eat it you will surly cry out, “Who Cares!”
NOTE: Don't make frosting ahead--you will need to pour it over the cake shortly after baking.
Preheat oven to 350 degrees.
Ingredients:
1 cup Coca-Cola
1/2 cup buttermilk
1 cup butter or margarine, softened
1 3/4 cups sugar
2 large eggs, lightly beaten
2 tsp vanilla extract
2 cups all-purpose flour
1/4 cup cocoa
t tsp baking soda
1-1/2 cups small marshmallows
Coca-Cola Frosting (recipe below)
3 tablespoons cocoa
Garnish:
3/4 Cup chopped pecans, toasted (optional)
Directions:
Combine Coke and buttermilk then set aside.
Beat butter at low speed with an electric mixer until creamy. Gradually add sugar, beat until blended.
Add egg and vanilla, beat at low speed until blended.
Combine flour, cocoa and baking soda. Add to butter mixture alternately with cola mixture, begin and end with flour mixture.
Beat at low speed just until blended.
Stir in marshmallows. Pour batter into greased and floured 13 x 9 inch pan.
Bake at 350 degrees for 30-35 minutes. Remove from oven; cool 10 minutes. Pour Coca-Cola Frosting over warm cake, garnish, if desired.
Coca-Cola Frosting
1/2 cup butter or margarine
1/3 cup Coca-Cola
3 tablespoons cocoa
1 (16 OZ) package powered sugar
1 tablespoon vanilla extract
Bring first 3 ingredients to a boil in a large saucepan over medium heat, stirring until butter melts.
Remove from heat, whisk in sugar and vanilla. Pour over warm cake while frosting is hot.

Cake
2 cups sugar
2 cups flour
1 cup butter
1 cup Coke
3 tablespoons cocoa
1/4 cup buttermilk
1 teaspoon baking soda
2 eggs
1 teaspoon vanilla
Frosting
1 cup butter
6 tablespoons cocoa
12 tablespoons Coke
2 lbs powdered sugar
1. Cake:.
2. Place the sugar and flour into a mixing bowl and set aside.
3. Bring the butter, coke and cocoa to a boil.
4. Add the boiled mixutre to the sugar and flour.
5. Blend in the remaining ingredients.
6. Place into 3 8 or 9 inch cake pans.
7. Bake at 375 degrees for 25 minutes.
8. Frosing:.
9. Bring the butter,cocoa and coke to a boil. Cool for 5 minutes.
10. Beat in the powdered sugar.
11. Add more powdered sugar if needed to make this a good spreading consistency.

Take any cake mix and replace the water with coke, root beer, or any flavor soda you desire. Bake as directed.
