Yes you can. The creators of the BitTorrent technology didn't forget this important feature. "Resuming" is always enabled in Bit Tornado or any other BitTorrent client.

In BitTornado, if you want to "pause" the torrent you're downloading, simply press the Cancel button. The next time you open the torrent file, it will resume from where it left off.

I can't speak for bittornado in particular, but I've never encountered a BitTorrent client where you couldn't stop and resume downloads (with the computer being shut down in between), so it seems very likely.

i dont know about bittornado, but I use bittorrents and yes , I can reboot and it will continue at the same place when I restart the program...it saves what you have previously downloaded
