sure it would... great for chicken salad, chicken noodle soup, pot pies, chicken and dumplings... etc.
and the broth would become even better so save that and use it too...

4 pounds chicken carcasses, including necks and backs
1 large onion, quartered
4 carrots, peeled and cut in 1/2
4 ribs celery, cut in 1/2
1 leek, white part only, cut in 1/2 lengthwise
10 sprigs fresh thyme
10 sprigs fresh parsley with stems
2 bay leaves
8 to 10 peppercorns
2 whole cloves garlic, peeled
2 gallons cold water
Place chicken, vegetables, and herbs and spices in 12-quart stockpot. Set opened steamer basket directly on ingredients in pot and pour over water. Cook on high heat until you begin to see bubbles break through the surface of the liquid. Turn heat down to medium low so that stock maintains low, gentle simmer. Skim the scum from the stock with a spoon or fine mesh strainer every 10 to 15 minutes for the first hour of cooking and twice each hour for the next 2 hours. Add hot water as needed to keep bones and vegetables submerged. Simmer uncovered for 6 to 8 hours.
Strain stock through a fine mesh strainer into another large stockpot or heatproof container discarding the solids. Cool immediately in large cooler of ice or a sink full of ice water to below 40 degrees. Place in refrigerator overnight. Remove solidified fat from surface of liquid and store in container with lid in refrigerator for 2 to 3 days or in freezer for up to 3 months. Prior to use, bring to boil for 2 minutes. Use as a base for soups and sauces.

Yes it will be good. It can also be simmered in plain water with some onion sliced up, a few sprinkles of garlic power and some dried parsley. Add salt, if needed, at the table, because so much poultry has salt added during the processing. You can always add, but you can't take away. Save the extra broth in the frig, skim off the grease the next day, and you have a good soup base for cooking other vegetables and making gravies. A good cook is a thrifty cook, as you will learn. Don't be sorry to be learning to cook, it is a lifelong learning experience, I am a retired senior lady and learning Indian with Indian spices. Best wishes

Yes it will add more flavor but it is kind of a waste!!! I will give you a way to cook chicken and it will fall off the bone and tast AWSOME!!! Take a small whole chicken or Cornish hen and do what you do to prep it!!! make you a marinade to brush on it while cooking the thing!!! Take a 12oz can of GOOD beer (Black Dog, Sweetwater Blue, or any other micro brew out there) or horse piss beer (bud, michelobe, and so on)... Open the can and stuff it in the rear of the chicken and set it up in the oven on a deep dish or on the grate of the grill and cook like normal, marinading it every so often till done!! Take it out and MAN WHAT A TENDER, JUICY, FLAVORFUL, FALL OFF THE BONE chicken you have ever had!!! (throw away the beer that you stuffed in it's butt after you cook it) lol

You don't need chicken broth. The chicken makes its own broth as it boils. Rinse chicken parts well and remove skin if you want less fat. Cover with water; add salt and pepper, a bit of onion powder and boil gently until chicken is done. You'll have broth for soup base or to cook noodles or dumplings.

Actually, it's very good. I do it all the time! What will make it even better is add some chopped onions when you're cooking and if you like , add some cream of mushroom soup with. Fix you a little rice with it and you'll have a great meal. My husband loves it! Hope I've helped a little!!
