I have a can of yellow tomatos, several cans of peas, a can of asparagus, a can of red tomatos, several pounds of rice, some potatoe flakes and one can of tuna. I just found these in the back of my pantry, and I think the cans are pretty old - maybe 3 years old. The rice is sealed in a mylar bag so I feel good about it.
You don't have to include all of the ingredients, but what would you make with these?

No expiration dates that I can decipher.
I thought of making soup, but with three cans I didn't think it would taste very good.

Hi Tony,
How about a quick long grain rice Risotto?
Just boil some rice, refresh under cold water and stand aside.
In a saucepan bring together, peas, yellow / red tomatoes a little
ground black pepper, salt, few dried herbs,glug of white wine let it
simmer for a while on a low heat to infuse (thicken) the flavours.
Add the mix to the rice fold in the tuna, serve with some lemon mash potatoes.
Some nice crusty bread, glass of cold crisp white wine ...perfect

Rice Pilaf

2 tablespoons butter
1/2 onion, chopped
1/2 red bell pepper, chopped (or use the tomato)
2 pinches kosher salt
2 cups long grain rice
2 3/4 cups chicken broth
2 strips orange zest
Salt & pepper
1 1/2 cups frozen peas, thawed (or canned peas)
1 can Tuna

Preheat oven to 350 degrees.
In a heavy, wide, lidded pan, melt butter over medium-low heat. Add onion, red pepper, and kosher salt. Sweat the onions and peppers until aromatic, stirring constantly. Add the rice and stir to coat. Continue stirring until rice smells nutty. Add chicken broth, salt & pepper. Bring to a boil. Stir once, then cover pan with moistened dish towel (or tea towel). Place lid on pan and fold towel corners over lid. Bake for 15 minutes. Then rest at room temperature for 10 to 20 minutes without removing the cover.

Meanwhile, simmer peas in salted water until heated through or heat in a microwave.

Remove lid from rice and turn out onto a platter. Add peas and Tuna, fluff with a large fork.

I'd cook the rice and pour the heated tomatos over it. Have peas on the side.

I'd buy a steak, cook and eat that. Then donate the canned stuff to a food shelter.

I wouldn't risk it with the cans. 3 years? I dunno. Are there experiation dates anywhere on the top or bottom?
