How long do you cook it for (1 lb. of meat) and at what temp?

I bake it 350 degrees for an hr. I have always covered it with foil. I have found that if it's not covered, it dries out while cooking no matter how much ketchup you put on top.

I never cover my meatloaf, unless I'm making a huge quantity of it, like 3 or more pounds. With that much mass, covering it will make sure that the inside gets cooked thoroughly enough. But if you're using 1 pound of meat, then don't bother covering it.

I'm not going to give a specific recipe, because whatever kinds of ground meat, egg, bread crumbs, herbs, etc etc you throw together will probably work OK. Just remember to mix all of your ingredients until they're JUST combined...you don't want to overwork the meatloaf mixture. That would result in tough meatloaf. And after you've combined everything, if you have the time, leave the mixture in the refrigerator for one to two hours, so the flavors/herbs/moisture can blend. It's not mandatory, but it'll produce a tastier meatloaf.

Again, no matter what specific ingredients you use, cook the meatloaf (assuming a total weight of 1 1/2 to 2 pounds) in a 350 oven for 50 to 60 minutes. If you have a meat thermometer, use it...you want the temperature in the very center of the meatloaf to be at least 160 degrees, but not more than 170. If the meatloaf is cooked to above 170, the meat will be "well-done", and dried out.

I cook my meatloaf covered it is a 3lb. meatloaf and it is cooked at 375 and it is 30 to 35 minutes per pound. I then at the last 10 to 15 minutes uncover it so it browns the top. It stay moist if it is covered but won't hurt it if it is uncovered for the last 10 to 15 minutes and then let the meatloaf stand about 10 minutes after you pull it out of the oven to rest. Then all the juices from the meat are put back into it.

It depends on how you like the outside. If you want the outer layer of the meatloaf to remain on the softer side, then cook it with tin foil covering it. If you like the crispier crust that forms on the outside of the meatloaf (which in my opinion, is the bext part!) then you'll want to cook it uncovered. As for timing - 50 minutes at 375 degrees - no matter whether you cover it or not. Good luck!

from a recipe I use for Venison (deer meat) meatloaf
it states to bake covered for 45 mins then uncovered for 20 more minutes at 350 degrees F.

for a ground beef meatoaf Bake 1-1/2 hours at 375 degrees.

I dont cover my meatloaf when I make it. I would put it on about 350 for about 45 minuets or until the meat is cooked. I make a homeade sauce to put on top of it as well.

Ketchup
brown sugar
dijon mustard
steak sauce
garlic
hot sauce if you want

I mix all that together in a bowl and marinate the meat with it while it is cooking. It is fabulous.

here is a wonderful receipe.

INGREDIENTS
1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
1/3 cup ketchup
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5x9 inch loaf pan, OR form into a loaf and place in a lightly greased 9x13 inch baking dish.
In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
Bake at 350 degrees F (175 degrees C) for 1 hour.

Uncovered at 350 for 45 to 60 minutes or until done. You can add cream of mushroom soup the last 15 minutes for a yummy taste..
