Depends. What are the stuffing ingredients? Is the acorn squash whole or mashed? If whole, roast some mini potatoes, or cut small Yukon Gold potatoes, lightly coated with oil and garlic, and when crisp and brown, pile them inside the slightly hollow shape of the squash. Sprinkle with chopped parsley. If the stuffing goes well with mushroom gravy, use parsley mashed potatoes or baked potatoes.Or,add a beaten egg to mashed potatoes, pipe large stars onto baking sheet with large star nozzle in piping bag, and bake until crisp and golden. Dinner sounds good tonight. Enjoy!

I would go with cheesy mashed potatoes. Depending on what you choose to stuff you chops with pick a cheese that complements the flavors of the stuffed chops. Garlic mashed potatoes are also a good choice.

how about twice baked potatoes?
4 baking potatoes

1/2 cup KRAFT Ranch Dressing with Bacon

1/4 cup BREAKSTONE'S or KNUDSEN Sour Cream

2 Tbsp. chopped chives

1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut up, divided


BAKE potatoes at 400°F for 1 hour. Slice off tops of potatoes; scoop out centers, leaving 1/8-inch shells. Mash potatoes. Add dressing, sour cream and chives; beat until fluffy.

SPOON into shells; top each potato with 1/4 of the prepared cheese product. Place in shallow baking dish.

BAKE at 350°F for 20 minutes.

Acorn squash is very filling and starchy, like potatoes, so I would not just have straight potatoes (mashed, baked, etc.) Do a baked dish, such as Au Gratin. Cheesy goodness, it mixes it up a bit.

I like to quarter potatoes, leave the skin on. wet them and shake in a bag containing lipton onion soup mix, bake them covered at 350 for about 20-25 min. OUTSTANDING!

Mashed most likely, you can use gravy for both the pork and the potatoes. Add some mushrooms (sauted).

You don't need a potato with them since you already have a starch (stuffing) have a vegetable instead. Something green would be good, like green beans. Applesauce is very good with porkchops too.

Sweet potato. Especially the glazed, and cut up ones. And if you don't like those, you should make Sliced, Garlic potato's with shredded cheese!!!

A baked potato would be nice. I use more rice side dishes than potatoes.

potatoes salad mad with chopped parsley and garlic 1 tea spoon of Dijon mustard oil salt pepper mix half squeeze of lemon.
