I need a recipe that is really easy, not costly & quick to make.
I do not want to have to work w/ the oven. So cross the oven out :)
Something in the microwave would be great.
Something hot or cold.
Whether snacks or a meal.

Get some microwavable rice, some defrosted shrimp, and some microwavable vegetables. Microwave all (not at same time), put the rice on bottom, shrimp and vegetables on top. Serve with soy sauce!!!

Clean, pierce with fork and bake potato(es) in the microwave (8 to 10 minutes on high depending on the size of potato(es) & your microwave, then nuke some microwaveable chili (or canned poured into a microwave safe bowl). Should be about 2 more minutes. Meanwhile, split open baked potatoes (careful--they are hot!) with a fork or table knife. When chili is ready, drain it a little and put it over potato, sprinkle some shredded cheddar on top & enjoy!

Snack:
Ingredients: 1 pkg crumbled feta cheese (original flavor/traditional), 1 container fresh cherry tomatoes or grape tomatoes, 1 red onion, 1 bottle balsamic vinagrette (i like the Kraft kind, but doesnt matter), 1 -2 pkgs Melba Toast ( i like the garlic flavored rounds with this recipe)
directions: cut tomatoes in half or quarters, dice red onion med-small pieces (depends on your preference). COMBINE diced onion, whole pkg of crumpled Feta and tomatoes in bowl. Then add Balsamic vinegrette (add as much or as little depending on your preference....i like it a little "soupy" and use about 1/2 bottle) and mix all together. Serve with Melba Rounds.
I prefer to have it chilled for a while so i usually put it in the fridge for at least an hour, if not overnight. It keeps really well and i also use it as a "topping" for my salads. it's good on spinach salads. And if i want it to be a little more of a meal, i'll fry up a small thin piece of steak with just a little bit of garlic salt and pepper on it (cooks in pan with oil for about 15 min), then cut it into strips and put it on the salad as well with the feta-onion-tomatoe dressing.
Bon Apetite!

I just had this for lunch and it's really yummy, basically salad/sandwich all wrapped up in one....
1/2 pita bread (whole wheat or plain, I like wheat though)
spring mix
grape tomatoes
avacado
sliced turkey lunch meat
slice of swiss (or any cheese you prefer)
italian dressing (I use Wishbone salad spritzers, sooo good!)
Mix all the ingredients together except pita bread, and toss with salad dressing, LIGHTLY!! Don't want it too soggy.... then basically stuff the whole thing into the pita bread. This travels well, is healthy for you, great for lunch, and tastes SO good! I whip this together at my desk in about 3 minutes.
Hope you like this. Enjoy!

I love corn meal cakes made on the top of the range. Take 1 cup of butter milk, I cup of self risen corn meal, 1 tbl spoon of oil, and mix, then fry the corm meal cakes like pan cakes, serve with butter and you have a nice bread. You can mix corn, and hot peppers in it to make a different treat.
