Red Wine Risotto
1/4 cup extra-virgin olive oil
1 medium onion, cut into 1/4-inch dice
2 cups rice
1/2 cup red wine (I use Sangiovese but you can use what you have got)
3 1/2 cups chicken stock, hot
4 tablespoons (1/2 stick) unsalted butter
1/2 cup freshly grated Parmigiano, plus more for sprinkling
In a 12 to 14-inch skillet, heat the olive oil over medium heat. Add the onion and cook until softened and translucent but not browned, 8 to 10 minutes. Once the onions are translucent add the rice and stir with a wooden spoon until toasted and opaque, 3 to 4 minutes.
Add the wine to the toasting rice, and then add a 4 to 6-ounce ladle of stock and cook, stirring, until it is absorbed. Continue adding the stock a ladle at a time, waiting until the liquid is absorbed before adding more. Cook until the rice is tender and creamy and yet still a little al dente, about 15 minutes. Stir in the butter and cheese until well mixed. Portion risotto into 4 warmed serving plates, serving with extra cheese

well when im not to into making something big i make this pasta recipe i learned from a tv show, its pretty good.
1lb of cappelini noodles or an thin long noodles
olive oil (3 to 4 table spoons)
garlic(3 or 4 cloves)
pepper flakes
a little tomato sauce
cook the pasta according to the package (make sure to salt the water). while the pasta is cooking, put the olive oil and garlic in a skillet let it cook. Then once pasta is done cooking place in the skillet with a little pasta water( like 3 teaspoons), the sauce and red pepper flakes. let it simmer for a few minutes and then put on a dish and eat ! if you dont like spicy foods omit the pepper flakes.

Here is an awesome recipe that is super easy.
1. Put some olive oil in a pan and then stir-fry some shrimp with cut pieces of red pepper and asparagus. At the same time, cook some penne in water.
2. Add some canned spagetti sauce (sundried tomato works best) to shrimp and veg and some garlic powder.
3. When the penne is done, add it to the pan and mix.
4. Serve with parmesan.
If you want to modify this recipe, throw in some sundried tomatoes or olives. It's very easy, good for you and tastes awesome!

How about some:
STUFFED GRILLED CHICKEN BREASTS!!
6 split chicken breasts
1/2 lb Italian sausage meat
3 cloves fresh garlic, minced
4 strips hickory or maple flavored bacon, chopped
1/4 lb fresh mushrooms, finely chopped
2 tablespoons butter
1 tablespoon fresh parsley, minced
1/4 teaspoon paprika
1/2 cup bread crumbs
1/8 teaspoon each onion and garlic powder
1 cup sherry
6 bacon strips
salt and pepper, to taste
wooden toothpicks or butcher's string
Sauté the sausage meat with fresh, minced garlic in 1/2 tablespoon olive oil; as the sausage begins to take on color, add the 4 bacon strips and fry til bacon is crisp and sausage is slightly browned, removing meat as it cooks. Add butter to pan and sauté the mushrooms over medium heat. Stir in bread crumbs and parsley. Season with salt, pepper, onion powder, garlic powder and paprika. Stir together well and pour in sherry to moisten. Remove from heat and stir in the sausage mixture.
Preheat grill until it reaches 350°F.
Split chicken breasts and pound with a meat mallet between sheets of plastic wrap. Do not make too thin. Spread sausage and bread crumbs mixture on eachchicken breast, and roll up so that chicken is stuffed on the inside. Wrap each piece with a strip of bacon and fasten with a wooden toothpick or tie into little bundles with cotton string that has been pre-soaked in water.
Spray chicken with olive oil spray and sprinkle lightly with garlic powder, paprika and black pepper.
Prepare grill for cooking over indirect heat, oiling the grates on the side opposite the lit burners so that chicken will not stick. Place chicken on the side of the grill which is not turned on, but leave the other side of the grill on high. Close cover on grill and watch temperature; reduce heat to 325°F and continue to grill for about 15 minutes, then turn once and leave for another 15 minutes or so (this depends on the size of the chicken pieces).
When chicken is pierced with a fork and juices run clear, it is done.
If chicken appears dry during cooking, spray or baste as needed with olive oil spray or olive oil, but do not leave the grill cover up for too long or the heat will be lost.
During the last 15 minutes of cooking, Grilled Potatoes can be put on the hot grill as an excellent accompaniment to this dish.

How long do you have to cook?
good fast meals: Chicken with a can of cream of mushroom sauce over it baked in the oven. Serve with veggies and warm bread.
Get some pre shredded chicken, like Chi Chi's shredded chicken for tacos (or shred it yourself), make some brown rice and get canned veggies called Mexicorn. Layer chicken and veggies over rice.
You could always make stir fry. Just add the strips of chicken or beef to Japanese or Stir fry veggie mixes from the frozen section and top with stir fry sauce.
Or you could make your own pizzas
these are just some of the things that my son and boyfriend love and they're both picky eaters.

Spaghetti with Asparagus, Smoked Mozzarella and Prosciutto
2 pounds asparagus, trimmed
3/4 pound spaghetti
4 tablespoons olive oil
4 garlic cloves, minced
Salt and freshly ground black pepper
6 ounces thinly sliced prosciutto, cut crosswise into strips
6 ounces smoked mozzarella cheese, diced (about 1 cup)
6 tablespoons thinly sliced fresh basil leaves
Cook the asparagus in a large pot of boiling salted water until crisp tender, about 2 to 3 minutes. With a spider or slotted spoon, remove asparagus from boiling water to a bowl of ice water to cool and stop the cooking. When cool, strain, cut asparagus into 1-inch pieces, and set aside.
Return the water in the pot to a boil, adding additional water, if necessary. Add the pasta and cook until al dente, tender but still firm to the bite, about 8 minutes. Drain the pasta, reserving 1 cup of the cooking liquid.
Heat the oil in a heavy large skillet over medium heat. Add the garlic and saute until fragrant, about 20 seconds. Add asparagus to the skillet. Season with salt and pepper, to taste. Add the pasta, and if needed, some of the reserved cooking liquid. Toss to coat. Add the prosciutto, mozzarella, and basil, and toss to combine. Turn off the heat. Season with salt and pepper, to taste, and serve.

It's what I call "Baja Chicken", and it's easy. It's made with McCormick marinade called "Baja Chipotle" found in the grocery store. Here's how;
Put chicken breast(s) in baking dish, cover with Baja Chipotle. Tear up fresh cilantro and sprinkle over chicken. Cover with tin foil, bake at 350 for about 30+ minutes. Meanwhile, make 5 minute rice in microwave. Drain rice, add some drained black beans (sometimes I also mix in cooked frozen corn) to rice and mix. When chicken is done, serve it over rice (be sure to put some of the chipotle sauce over it too), and finish with some avocado slices on top. It's my husband's favorite dish, and he's SO PICKY!!

Really easy and lite
1-2 Chicken breast
In a baking dish/pan pour a can of diced tomatoes on top. Sprinkle with salt and pepper. Bake at 400 for about 35-40 min. Serve with white rice or pasta.
or
1 lbs of shrimp
Marrinate with olive oil, 2 cloves of minced garlic, sprinkle a little salt and pepper. You can also add a little sugar, lemon juice or lemon salt for diff variations. Let sit for about 10 min in fridge and then bake or grill on frying pan for about 2 min on each side. Serve with rice and veggies.

Squeeze a lemon over it and add, Rosemary to a Chicken place in a roasting pan, with potatoes carrots, onion and stick in the oven at 375 for 1 hour and voila,,, dinner is served!
