I make what I call a Stroganoff Casserole.
Pound of ground beef, browned and drained
One small onion, minced and sauteed with the beef
Can of cream of mushroom soup
8 ounces of sour cream, stirred into the soup
Garlic powder, as much as you like, stirred into the soup
Package of egg noodles, cooked and drained
Parmesan Cheese
Mix all ingredients except the cheese in a casserole dish, sprinkle the cheese on top, toss in the oven at 350 for about 20 minutes. Enjoy.

Taco Pie
INGREDIENTS
1 (8 ounce) package refrigerated crescent rolls
1 pound ground beef
1 (1 ounce) package taco seasoning mix
1 (16 ounce) container sour cream
8 ounces shredded Mexican-style cheese blend
1 (14.5 ounce) package crushed tortilla chips
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Lay crescent dough flat on the bottom of a square cake pan and bake according to package directions.
Meanwhile, brown the ground beef in a large skillet over medium high heat. Add the taco seasoning and stir together well. When dough is done, remove from oven and place meat mixture on top, then layer with sour cream and cheese, and then top off with the crushed nacho chips.
Return to oven and bake at 350 degrees F (175 degrees C) for 10 minutes, or until cheese has melted.

Baked pasta! This is basically pasta, pasta sauce, and ground meat mixed together and baked.
Use any type of pasta you'd like (spaghetti, penne, lasagna). Generally 1 lb of pasta goes well with 1 lb of meat. Then 1 - 2 jars of pasta sauce to your liking.
My current favorite is actually:
1 lb ground meat browned
1 lb pasta cooked and drained (save some of the water)
1 16 oz can of tomato sauce
1 16 oz jar of pasta sauce (any flavor you like)
1 16 oz can of diced tomatoes (any flavor, but something interesting helps!)
dried diced onions are nice
garlic powder
Mix the tomato sauce, pasta sauce, and diced tomatoes. Use any combination of these three that you'd like.
I layer these ingredients in the casserole dish. Pasta first, then just a little sauce, then a layer of meat, then a thorough layer of sauce. If there's still space, start over with the pasta.
It's best when the very top layer is sauce, and the layer below that is meat. If pasta is near the top, it can dry out while baking and then you have super hard bits.
Also good: Chicken Bruschetta!
Ingredients and instructions can be found by doing a web search.
It involves boneless skinless chicken breast, dry stuffing, cans of diced tomatoes, and cheese if that's your thing. The stuffing and the tomatoes get mixed together, placed on top of the raw chicken, and then the whole thing is baked 30 minutes. Cheese goes anywhere you'd like, but mainly on top.

Impossibly Easy Cheeseburger Pie

ï· 1 lb. Ground Beef
ï· 1 large Onion, chopped
ï· Â½ tsp. Salt
ï· 1 c Shredded Cheese
ï· Â½ c Bisquick Mix
ï· 1 c Milk
ï· 2 Eggs
Heat oven to 400 F. Spray or grease 9” pie plate.* Brown beef and onion; drain. Stir in salt. Spread in pie plate; sprinkle with cheese. In bowl, stir together remaining ingredients. Pour into pie plate. Bake about 25 minutes or until knife inserted in center comes out clean.
High Altitude (3500-6500) Bake 30-35 min
*A casserole dish or square glass pan works or any other size/shape glass pan works too
I add bacon to mine. I add it to the meat before I place it in the pan.

GROUND BEEF AND POTATO CASSEROLE
SERVES 6
This is one of my mother's recipes. It's very good and easy to prepare.
INGREDIENTS
1 pound lean ground beef
Garlic powder to taste
Dried basil to taste
Salt and pepper to taste
4 potatoes, sliced 1/4-inch thick
2 medium onions, sliced 1/4-inch thick
1-1/2 cups fresh or frozen corn kernels
1 green pepper, diced
8 ounces mushrooms, sliced
1 pound canned tomatoes, crushed
1 tablespoon chopped fresh parsley
Preheat oven to 350° F. Butter or spray a 3-quart casserole. Thoroughly mix together the ground beef, garlic, basil, salt and pepper.
Assemble the casserole in the following order: half of the ground beef, half of the potatoes, half of the corn, half of the tomatoes and parsley, half of the onions and peppers, all mushrooms, remaining potatoes, remaining corn, remaining onions and peppers, remaining ground beef, remaining tomatoes and parsley. Cover casserole and bake for 1 hour. Remove cover and bake for 1/2 hour more.
Note: Any seasoning can be used with the ground beef.

Meat and potatoes. It's a skillet cassarole.
A pound of ground beef, 4 medium potatoes, 2 cups of liquid (I like half milk and half water), a tablespoon of flour, a cup of frozen peas, a cube of beef boullion, pepper and parsley.
Peel and slice potatoes. Cook potatoes in the skillet with the beef, parsley and pepper (to taste). Don't drain it. The grease makes the gravy flavoring. When the meat is brown and the potatoes are tender, mix about a tablespoon of flour in a cup of cold water. Dissolve bouillion cube in this. You can either add another cup of water or a cup of milk or cream(any kind but sweetened). Pour the liquid into the meat and potato mixture. Stir in frozen peas. It's done as soon as the peas are warm.

GROUND BEEF NOODLE CASSEROLE
1 lb. ground beef
1/2 tbsp. oil
Salt and pepper
1/2 tbsp. Worcestershire sauce
2 c. noodles (egg, penne, rigatoni)
1 (15 oz.) can tomato sauce
1/2 can Cheddar cheese soup
1 sm. onion, diced
Brown meat, cook noodles partially. Add salt and pepper, Worcestershire, onion, noodles, and tomato sauce to skillet with browned meat. Cook at medium heat until onions are cooked. Turn into casserole and top with cheese soup. Bake at 350 degrees uncovered for 30 minutes.

Brown 1 lb. ground beef and drain. Mix in 1 pkg. taco seasoning. Add 1 can tomato soup, 1 can whole kernal corn, 1/4 cup chopped green pepper, transfer to a baking dish, and top with a prepared package of cornbread mix. Bake until cornbread is golden.

SOMBRERO CASSEROLE
1 lb. ground beef
1/2 c. chopped onion
1/2 c. hot ketchup
1 tbsp. chili powder
1 tsp. salt
1 (16 oz.) can kidney beans, with juice
1/2 c. chopped olives
1/2 c. chopped onions
1 c. sharp cheese, shredded
Brown ground beef, add onions and cook until tender. Then add ketchup, chili powder, salt. Mash beans with juice and add to beef mixture. Heat through. Put into a flat baking dish. Garnish with onion, green olives and sharp cheese. Bake 20 minutes at 350 degrees. Serve with fritos or crackers.
HAMBURGER GREEN BEAN CASSEROLE
1 can cream of mushroom soup
1/3 c. bread crumbs
1/4 c. onion, chopped
1 egg
1 lb. ground beef
Salt & pepper
Mix 1/4 cup of the mushroom soup with the rest of the ingredients. Line a small casserole with this mixture like a pie shell. Mix remaining soup with 1 (16 ounce) can of green beans and fill centers of casserole. Top with crumbs or tater tots. Bake at 350 degrees for 35-40 minutes.
TACO DISH
1 lb. lean ground beef
2 tbsp. taco seasoning mix
2 tbsp. ice water
1 c. shredded cheese
TORTILLA CHIP FILLING
1/2 pt. sour cream (1 c.)
2 tbsp. taco sauce
2 oz. chopped ripe olives
3/4 c. coarsely crushed tortilla chips
To prepare tart chip filling, mix all ingredients together in bowl; set aside. In a medium bowl mix beef, taco seasoning, and ice water with hands. Press into bottom and sides of 1 1/2-inch miniature muffin cups, forming a shell. Place a spoonful of filling into each shell, mounding slightly. Sprinkle cheese on top. Bake for 7-8 minutes. With tip of a knife, remove tarts from pan. Serve immediately or cool and freeze. Makes about 30.

One of the best, and easiest, is a Taco casserole. Just make your taco meat like normal (either season to taste of use a package seasoning mix), cook, and add grated cheddar cheese and sour cream. You can also add guacamole (purchased or fresh made) to taste. Serve or taco or corn chips, or with the chips on the side. An easy yummy dinner!
