It's only been interpreted that way. In my readings of the texts it appears that the son of man is a future figure that Jesus is making reference to. You have to remember at the time of his ministry he did not think of himself as the messiah, and his followers most likely did not either. A lot of the divinity of Jesus was written into scripture years after his death. Son of man is a reference to something external to Jesus... it's only from rationalizations by later authors in order to paint Jesus as a messianic figure that son of man has been equated to Jesus himself.

In the culture of his time, to call someone "the son of...." meant that they had all the rights, powers, nature and authorities of their Father. I calling himself "the son of God", Jesus showed that he had the nature and power of God. By calling himself the "sonf of man", he showed he also have the nature and rights of a human. He was both God and man.
During the time Jesus was on the earth, he did everything he did as a man, not as God. He said that it was possible for a human to live a perfect life through the word, spirit and obedience to God. He did those things as "the son of man". That way we know we can do the same.
Also since sin came into the world through a human being (Adam), it had to be a human being who redeemed man through obedience. So Jesus had to be fully human. He had to have the nature of man - but without sin.
So you will find both nature spoken of in scripture. Jesus was both God and man.

Jesus is the son of man, because he gave his life for our sins. When Adam sinned in the Garden, he had not had had any children, so when he sinned, he pssed it down the line when he finally had kids, and it took a perfect life for a perfect life, so he was born a virgen, for man.

it is just the hebrew word for human being - ben adam. In aramaic it was probably the same or similar (the language jesus spoke)
ben - son
adam - man
so it actually just means "the person"
(sometimes you can just use "adam" to mean human, but there are cases where it doesn't work, eg it has no plural. So you tend to use "ben adam")

Bc' HE was fully "man"~ just as HE was fully DIVINE. Jesus was GOD IN THE FLESH. Son of Man is used to refer to humankind in general.

Because he was sent forth to be born as a human baby of a human woman with human relatives. So in effect, he was born to mankind as a human or "man". Using that terminology would endear him to his disciples and others in showing them he is experiencing life as a human.
