Pot Roast Stew
3 pound chuck roast -- (3 to 4)
2 cloves garlic, halved lengthwise
2 tablespoons olive oil
1 large onion, cut in 1/2" slices
2 medium turnips, peeled and cut in chunks
3 rib celery, cut 1/2" slices
4 cups water (I use 2 cups beer and 2 cups water)
2 beef bouillon cubes
4 medium potatoes, peeled, quartered
1 pound carrots, cut in chunks
1/2 pound fresh green beans, trimmed
1/2 pound fresh sliced mushrooms
3 tablespoons cornstarch
1/4 cup cold water
Cut slits in roast; insert garlic slivers into the slits. In a large deep skillet, brown roast on all sides in oil. Remove roast. Add onion, celery and turnips to skillet. Place roast over vegetables; add water and bouillon cubes. Bring to a boil. Reduce heat; cover and simmer for 2 hrs. Add the potatoes, carrots and green beans; cover and cook for 45 minutes.
Add mushrooms; cover and cook 15 minutes longer or until meat and vegetables are tender. Remove to a serving serving platter and keep warm. Skim fat from pan juices. Combine cornstarch and cold water until smooth; stir into pan juices. Bring to a boil; cook and stir for 2 minutes. Season with salt and pepper. Slice roast; serve with vegetables and gravy.

Pot Roast Recipe
It requires slow cooking over low heat to ensure tender, flavorful meat. This is my mother's method.
3 1/2 lb of beef shoulder or boneless chuck roast
1 Tbsp olive or grapeseed oil
salt, pepper, italian seasoning to taste
1 large yellow onion, chopped or sliced
4 cloves of garlic, peeled
1/2 cup of red wine
Several carrots, peeled and cut lengthwise
2 When roast is browned, lift up the meat and add garlic and chopped onion to the bottom of the pan. Let the roast sit on top of the onions. Add 1/2 cup of red wine. Cover. Bring to simmer and the lowest heat possible to maintain a low simmer (we cook our roast on the warm setting of our range)*.
3 Cook for 3 1/2 to 4 hours, until meat is tender. (If you are using a pressure cooker, cut the time by half). Near the end of the cooking, add carrots, cook until tender, about an additional 10 minutes.
After cooking 3 1/2 hours, before adding the carrots. Note how much liquid has been released by the meat. This comes from slow cooking at a very low temperature. If your pot roast is too dry, make sure the pan you are using has a tight fitting lid and that you are cooking at the lowest possible heat to maintain the low simmering.
Serves 4. Suggest serving with green beans and potatoes

I put my pot roast in the crock pot and fill it with enough beef and chicken broth til the top of the roast is covered plus 2 inches. Then I add one small can of cream of mushroom soup, 3 tbsp real butter, salt and pepper to taste. Let it cook for several hours. I usually let mine cook overnight as that makes it even more tender. When it is done I take 1/2 the juice out and put it in a sauce pan and add a bit of heavy whipping cream, diced up shitake mushrooms and use a wire wisk til it is kinda thick. Spread this over the meat as you serve it. You can take the rest of the broth out of the crock pot and even some of the meat and put it in the freezer til you need it again. Also you can take some of the meat and chop it coursely and use for tacos etc. This is the ONLY was I cook my roast and many other meat cuts! Hope this works for you!

I make it so good buy the Lipton onion soup packet 2 off them, a plastic bag for baking , carrots onion, potato's, rub the roast with onion soup 3 hours before cooking, leave a half bag for veges, get all your veges wash cut and spice with black pepper all spice nutmeg,the rest onion soup , when 3 hours is up get the roast put in cooking bag with all the veges don't forget some salt, cooked for each pound 25 minutes, 3ponds 1hour 10 minutes ,make mashed potato's on side and spurge's,with french rolls. what a great meat

That's called Beef Stew if it's like soup. They sell dry packet seasonings in your local grocery store. Good luck!
