Oatmeal Banana Cupcakes

INGREDIENTS
1/2 cup butter or margarine, softened
1/2 cup sugar
2 eggs
1 cup mashed ripe bananas
3/4 cup honey
1 1/2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking powder
1 teaspoon baking soda
3/4 teaspoon salt

DIRECTIONS
In a mixing bowl, cream butter and sugar. Add eggs, bananas and honey; mix well. Combine dry ingredients; stir into creamed mixture just until moistened. Fill paper-lined muffin cups two-thirds full. Bake at 350 degrees F for 18-20 minutes or until cupcakes test done. Cool in pan 10 minutes before removing to a wire rack.

Banana Cookies

INGREDIENTS
3 ripe bananas
2 cups rolled oats
1 cup dates, pitted and chopped
1/3 cup vegetable oil
1 teaspoon vanilla extract
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, mash the bananas. Stir in oats, dates, oil, and vanilla. Mix well, and allow to sit for 15 minutes. Drop by teaspoonfuls onto an ungreased cookie sheet.
Bake for 20 minutes in the preheated oven, or until lightly brown

Torta De Platano Maduro (Ripe Plantain Cake):

45 min 45 min prep
4 servings

7 tablespoons butter
2 plantains, very ripe, peeled and cut in half crosswise and cut lengthwise into 1/4-inch slices
2 cups queso blanco, grated or grated muenster cheese
3 tablespoons sugar
1 teaspoon ground cinnamon
3 egg whites
3 egg yolks
1 tablespoon flour or dried breadcrumbs

1. In a heavy 8 to 10 inch skillet, melt 3 tablespoons of butter over moderate heat.
2. When the foam subsides, drop in the sliced plantains and cook, turning frequently, until the slices are golden brown or both sides.
3. Transfer the plantains to a double thickness of paper towels to drain.
4. In a small bowl, mix the grated cheese, sugar and cinnamon and set aside.
5. In a large bowl, beat the egg whites with a whisk or a rotary or electric beater until they are stiff enough to form unwavering peaks on the beater.
6. In a separate bowl, beat the egg yolks until they are thick and lemon colored, then with a spatula fold the whites into the yolks.
7. Preheat the oven to 350 degrees F.
8. Grease the bottom and sides of a deep 1 quart baking dish or mold, then sprinkle in 1 tablespoon of flour or bread crumbs, tipping the dish to spread the flour or crumbs as evenly as possible.
9. Turn the dish over and rap it sharply to remove any excess. Ladle about a quarter of the egg mixture into the dish, and spread it with the back of a spoon.
10. Cover with a layer of plantains--using about one third of the slices.
11. Sprinkle with 2/3 cup of the cheese mixture and dot with 1 tablespoon of butter.
12. Repeat the layers two more times, ending with the egg mixture.
13. Dot with the last tablespoon of butter and place in the middle of the oven.
14. Bake for 35 minutes.
15. Serve hot directly from the baking dish, or let the cake cool for 5 minutes or so and unmold it onto a platter in the following fashion:
16. Run a knife around the edge of the dish and dip the bottom in hot water for a few seconds.
17. Cover the dish with an inverted platter and, grasping dish and platter together, turn them over.

When i have an oversupply of ripe bananas, I mash them with a bit of lemon juice to prevent them from turning brown. Then I measure them out into containers holding 1 cup, and freeze them for future use.

Just thaw whenever you want to make banana bread or muffins.

I often add some mashed bananas and a bit of nutmeg to pancake batter.

Yep, cookies. Banana Choc Chip Walnut cookies. They are slamming! Basically use a regular recipe for Choc Chip cookies, cut the oil back by a cup and add 2 cups of bananas and 1 cup of walnit chopped up.

I don't know if this counts as different from banana bread but...banana muffins?

Young children also seem to love mashed ripe bananas in sandwiches with peanut butter (PB and banana sandwiches). You can try that!

Banana Cake:
3 to 4 bananas
2 c. flour
1/2 t. baking powder
1/2 t. salt
3/4 t. baking soda
1/2 c. shortening
1 1/2 c. sugar
1/4 c. sour milk
2 eggs
1 t. vanilla
*you can topit with vanilla or cream cheese frosting.

Banana milkshakes?

You could probably search this on google, but if your tired of plain old banana bread then you could try adding some chocolate chips or nuts to it.

I made this on Saturday morning!!! so goood....

Add 1 tbsp of olive oil to a pan. Set on medium high heat and add bananas!!! then serve with eggs over easy and an english muffin or hashbrowns.... its the orefect compliment to a full hearty breakfast Hot fruit!!!

muffins...creme pie...cookies...ice cream...freezer pops...pancakes...waffles...when they get that bad, I throw them in the deep freezer, skin and all...come winter, I make a ton of banana bread for all my neighbors to say "happy holidays" and to the local homeless shelter so they can (try to) have a happy holiday as well
