Always use new lids. Don't try to re-use lids. Always sterilize the jars, lids and rings in boiling water (for 10 minutes) before filling jars. Don't touch the jars or lids with anything that is not sterile, including drying the jars or lids. Make sure the rim of the jar is clean, use a canning funnel to fill the jars. Screw the rings until they are just snug before the water bath. Screw the rings on tight after you have heated and cooled your jars.

are you boiling them long enough?
at least 20 minutes for already cooked foods and at least 3 hours for non-cooked foods unless your using a pressure cooker then you need to refer to the guide that came with the cooker.

Sometimes they don't seal. Either you try reheating them or throw them away.
