The Catechism of theCatholic Church is the complete overview of the Church and all its beliefs. It may be tough to work through so make sure you have a Bible handy to referece where they basis their beliefs from. You can buy in any bookstore I believe. If you stop by a Catholic bookstore, they will have a great selection of Chathlic books. There is one, "Catholic Replies to everyday questions" that is easier to understand and bases all its selections on the Catechism.

There's a big difference between learning more about the Catholic church and learning about the history of the church.
Someone mentioned the "Catholicism for Dummies" book, which is about Catholicism, but not the history. It's all about what Catholics do and believe. It's quite good. Written by two priests.
If you want to learn about how Catholicism came to be, here is a link to a list. The "Early Church Fathers." Click the item below their name. It will take you to the teaching or dialog. Tertullian is a good one. This list also includes a list of Councils - where Bishops got together to form what eventually became One Holy Catholic and Apostolic Church.
Take not of the 4th Council. The Council of Nicea. That was the meeting in Rome, where Constantine made Catholicism legal. A lot has been made about the Council of Nicea lately. Check it out and see everything they discussed.

You have to go to catholic books about the catholic doctrine, not the bible. I would have a problem with that if i was catholic.
