the idiom french is as subtle as portuguese in terms of playing with words.
There are some possibilities and I will not be literal, I got the concept... well.. lets see...
1 - You're not leaving just like that as if I am scared or so... Allow us an hour or two and lets grab a coffee, I do know very well this mind of yours.
2 - Do not walk away in order to scare me... Give me an hour or two, I will get myself some coffee. I do recall how your mind works.
Now... The last part, "je me souviens plus quelle tete tu as", can also be:
A - I don´t know you (your mind, way of thinking) anymore.
B - I do remember how stubborn* you can be (or you are)
* There's an expression very similar to what you wrote that means stubborn. And since I found some errors in the text, it might be one as well.
