Add celery salt, garlic pwder and fresh ground pepper to the egg and mayo adherant.
Start with un-seasoned bread crumbs. Season the bread crumbs with a good cajun seasoning. Tony Chacha`re`s is the best. Use Zattaran's if you can't get Tony Chacha`re`s. The more you add, the more 'zing' you get. Experiment to get the level of zing you desire.
Prepare otherwise as normal.
Enjoy :-)

Add some Lawry's garlic salt and some black pepper. Instead of using two starches (mashed potatoes & rice) use only one, maybe the rice with something green, like green beans or broccoli. Or some applesauce as an added side would also be good.

To make it taste similar to Kentucky fried chicken, add a bit of sage, thyme, oregano, garlic, onion, cayenne pepper, basil and paprika, pepper, chicken seaoning, parsley, rosemary into the batter. Depending on the quantiy, for say 6 breast's I would use of all the things a quarter teaspoon.

Wasabi mashed potatoes are always a favorite in my house. Just mix some wasabi powder/water or wasabi paste into the potatoes to taste (after they are mashed).
Also nice would be a mushroom sauce for the chicken. You can find a nice recipe on either foodtv.com or epicurious.com

Add hot red pepper for some zing. Or you can add Italian Seasoning to the bread crumbs and give it an international flair

My Fiance' s family is from El Salvadore. Until I got with him I never heard of cooking mayo and chicken together. He makes it so delicious by marinating the chix w/ mayo, mustard, spicy season salt, and the juice of one lime. Then he frys it. I'm sure it will be great with breadcrumbs as well. I'm going to have to try that

I use Old Bay seasoning. You can also use cayenne pepper or hot sauce if you have it.
Or, you can add mustard to your egg and mayo batter.
Tip: Look at what you have in your pantry. Use seasonings you might have or use lemon, lime or orange. Experiment and just have fun with it.
