2eggs (3 If You Are very Hungry or just plain greedy)
A frying pan or omelette pan if one is available (not essential)
a little vegetable or olive oil
A choice of filling (if you do not want it plain) e.g some cooked mushrooms, Finely sliced ham, or peeled prawns, grated cheese, cooked chopped tomatoes
Salt & Pepper

What You Do Is:
Have your choice of filling prepared in advance and ready on a plate beside your cooking area.

A note about the frying pan
It is essential with omelettes that the pan you use does not stick, to stop a pan from sticking, make sure it is clean, then put about a 10ml layer of salt in it, then heat it getting it very hot shake the salt around til its brown. Discard the salt and remove the residual granules carefully from the hot pan with kitchen paper. The pan will now cook an omelette without sticking.


Put the pan on to heat with a little of the oil in it (not too much, about 2 tbspns max)

Break the eggs into a dish and whisk them with a fork untill well mixed add a little salt and pepper.

When the oil has blue huey smoke rising from it pour in the whisked egg, have a fork or flat wooden spatular ready, and as the egg mix starts to bubble keep bringing the cooked parts gently into the centre. This gradually allows the omellete to set into a pancake style consistency.
Carefully tap the pan so that the cooked omelette moves and slightly overlaps the pan edge.

Gently fold this overlap in toward the centre it should only go one third distance.

Now arrange your chosen filling in the centre of the omelette and fold the other edge in towards the middle.
You can serve it with a salad garnish or as a meal with chips or Jacket potato and peas. Chop some parsley and sprinkle it over to finish

I'm known for my famous gut-busting Italian omelettes and I'll share it with you. First, you can take the omelette part from any recipe that pleases you. The best part is the insides, of course.

When the omelette is ready for the filling, put pepperoni, sausage, mushrooms, (whatever pizza stuff you like) etc. inside along with mozzarella cheese. Be generous. The key to good cooking is to use lots of what people like. When it's cooked and on the plate spoon some spaghetti sauce over it and melt some more mozzarella by placing it in the microwave for 15 seconds.

Serve it with garlic bread and watch their eyes light up.

Servings: 1
Ingredients: 1 1/2 cups egg substitute (I just use eggs)
Canola oil
2 Tbsp. shredded cheddar cheese
1/4 tsp. NutriFit Calypso Salt Free Spice Blend (1/2 tsp. chili powder, 1/4 tsp. cumin, 1/8 tsp. black pepper, and 1/8 tsp. garlic powder.)

Directions: 1. In a small bowl, whisk the egg and spice blend together.
2. Heat a nonstick skillet, put a little bit of oil, and egg mixture into the pan. Cook, allowing the eggs to set and lifting up the edges of the omelet as it forms to allow the liquid to run to the bottom of the skillet. This will allow the bottom of the omelet to cook. Turn when the eggs have set, and add the cheese on the bottom half of the omelet. Fold the top half over the cheese, forming a half-moon shape.
3. Serve immediately.
Storage instructions: Refridgerate promptly; do not freeze.

slightly fry sliced courgettes and slices of onion(red) together in frying pan, arrange the courgettes in a circle, add fresh tomatoes and 6 eggs (beaten),sprinkle a pinch, salt, pepper and paprika over the vegetables and eggs while frying, then on top arrange Choritso sausage, grate as much cheese as you want over the top and sprinkle again with paprika and also Oregano, put under grill for a few minutes until golden brown... then serve, usually 2 people... (Spanish Omelet).. yummy...

yes=== 2 fresh free range eggs, beat together, add a pinch salt and pepper, put knob of butter in a small frying pan, when melted tip eggs into it and keep moving about till eggs just set, the add your own ingredients like cheese ham etc, then fold in half and turn out onto a warm plate, works for me every-time,good luck.

the trick is to give the eggs a real good beating then it will be all fluffy! add salt and black pepper and chopped parsley(fresh taste and looks nice!) some people add a dash of milk but i dont notice a difference i think its all in the beating the eggs!.....then just add what ever filling you like.. i like mushroom and onion spanish omelete is nice tho. or good old cheese! hope that helps

three eggs slice some thin courgettes , mushrooms an tomatoes then smoked salmon it very delicious an if you want some philadelphia cheese to finish it of ..

2 eggs,chopped onion,frozen peas,handfull, 2oz cheese, chopped tomatoes,salt and pepper,lighty fry onions,and tomatoes peas whisk eggs add to these ingredints add cheese, cook gently, then fold in half until cooked.
