Isn't "forever" the same as "eternally"? Why do you need to add "and ever"? Isn't that redundant?

But all fairy tales end "and they lived happily forever and ever". Why should the christian fairy tale be any different?

Maybe they add "ever" for emphasis, due to the fact that no one's life on earth lasts forever. Eternity is a difficult concept to grasp.
