I've just discovered I like tater tots with mild hot sauce, like from del taco or taco bell. So I'm wondering what kind of recipes I can come up with involving spicier potatoes. Any suggestions?

1 tablespoon Dijon mustard
1 tablespoon vegetable oil
1 clove garlic, minced
1 teaspoon dried tarragon
1/4 teaspoon paprika
1/8 teaspoon red pepper flakes
2 large potatoes, peeled and cut in 1 inch pieces
salt, to taste (optional)


Combine mustard, oil, garlic, tarragon, paprika, and pepper flakes.
Wash potato pieces and pat dry with paper towels.
Add to spice mixture and toss to coat well.
Very lightly grease a baking sheet.
Add potatoes in a single layer.
Bake in a preheated 350F oven for approximately 35 minutes or until potatoes are tender.
Sprinkle with salt, if desire

I like tater tots with the Taco Bell Fire hot sauce or the hot sauce that they have in Vietnamese restaurants - Sriracha Hot Chili Sauce

For example, from the oreida website:
Taco Taters
- 1 package (32 ounce) Ore-Ida® Tater Tots
- 1 pound lean ground beef
- 1 can (15 1/2 ounces) Mexican-style chili beans
- 1 can (6 ounces) Italian-style tomato paste with roasted garlic
- 1 envelope (1 1/4 ounces) taco seasoning mix
- 1 can (14 1/2 ounces) stewed tomatoes with onion, celery, and green peppers
- 1 can (2.8 ounces) French-fried onions
- 1 1/2 cups shredded cheddar cheese

Layer Tater Tots® in bottom of a 13-in. x 9-in. x 2-in. baking pan. Bake at 425 degrees for 15 minutes.
Meanwhile, in a large skillet, brown beef; drain. Add beans, tomato paste, seasoning mix, tomatoes and water. Bring to a boil, reduce heat to low and simmer 10 minutes. Stir in onions.

Sprinkle 1/2 of the cheese over hot Tater Tots®. Spoon meat mixture over cheese; top with remaining cheese.

Bake at 350 degrees for 20-25 minutes or until hot.

TATER TOT TACO SALAD

2 cups frozen miniature Tater Tots
½ pound ground beef
2 tbsps. taco seasoning
½ cup shredded cheddar cheese
¼ cup sliced ripe or stuffed olives
1 cup shredded lettuce
2 tbsps. taco sauce
¼ cup sour cream

Bake Tater Tots according to directions on package. Meanwhile, in a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the taco seasoning. Divide Tater Tots between two serving plates or bowls. Top with taco sauce and sour cream.

Take your baked tater tots and top them with canned chili, cheese. and Louisiana hot sauce

I like Old Bay Seasoning(crab boil) on french fries!! Even better on grilled corn on the cob!!!! :)
Can't wait for Summer Jersey Corn!!!

use crushed red pepper i love them on almost everything !
