Hi, Im going to make my 2 children a broccoli and cauliflower bake, only problem is i dont have any clue how to make the cheese sauce...I dont want to use 1 of them packet mixes as its far too high in salt

HELP!!!! MUM IN DESPARATE NEED OF COOKING LESSONS !!!!

one and a half tablespoons of cornflour. 1 pint of milk. Put milk in a pan to heat, leaving a little in a jug to which you add the cornflour. Mix the cornflour and milk in jug. When rest of milk is almost boiling add the mixture and stir continuously til boiled. add grated cheese to taste when removed from hob. Easy peasy.

Ok, cheese sauce is simple.

Melt some butter in a saucepan, turn the heat down but not off. Add enough plain flour to soak up the butter and stir it with a wooden spoon over the heat until you have a paste. Meanwhile put some milk - about 3/4 of a pint is fine in the microwave for about 30 seconds to take the chill off. When the flour and butter is like paste, add the milk in and whisk like you've never whisked before. You will notice the sauce start to thicken. When it reaches the desired consistency add some grated cheese and a little black pepper.

And there you have it - cheese sauce!

Ooh forgot to say that you can also add some chopped ham or chicken in a dish, then add the (cooked) brocolli and cauli and pour the sauce over the top. Add a little extra cheese and put in the oven gas mark 5 for 20 mins.

Hi, I know you have heard all of this before, but after seeing one of those cookery programmes on the television, I have changed how I make my cheese sauce and it is fantastic for cauliflower cheese.

1 carton double cream
lots of grated cheese.

and that is it.

Cook the cauliflower & broccolli until still firmish, I always use a steamer, but it is up to you, at this point I would also fry a leek and maybe some bacon, but this is not necessary. Put them all in a oven proof dish, heat the cream in a saucepan, add the cheese - it depends on how strong you like the sauce, stir until melted, pour over the vegetable mixture, sprinkle over a little more cheese and pop into a warmed oven for about 10 minutes until nice and golden brown.
Trust me it's wonderful - I have had so many people comment on this and not go back to the butter, flour sauce.

p.s. I have found that you do not need to add any salt to this as the cheese is salty enough.

Sweetie,go to the store and there are three options.
option #1:Purchase a block of cheddar and some heavy cream or milk.Make sure your pan is cool before you add milk,you want to bring the milk to temperature not shock it and possibly curdle it.Once you have your milk,about 2 cups give or take.This isnt rocket science you dont have to measure exact.Turn the heat on,medium to medium low.Chunk about half the cheese,(If you used 2 cups of milk,use 1 1/2 cups of cheese).Let that heat through stirring constantly,this will prevent sticking and burning.It will melt together,i prefer using cream.I find you get a more rich sauce.You want a thick gooey sauce,but one that will hold the "gooey" and not harden.If it is milky,liquid add more cheese.It needs to be "gooey" so that it sticks to your broccoi and cauliflower.
Option 2:Buy a block of Velveeta cheese,and some cream or milk.Same method,milk and cheese on the stove.Again,cold pan to start with.Melt cheese into milk mixture.You want it not to be milky or watery,you want a thick gooey sauce.If you need add more cheese.
Option 3:In a sauce pan add about 2 or 3 table spoons of butter.Mix in the same amount of flour,let it cook off.Dont let it go too dark,but cook just enough to get the raw flour taste out of it.Next,add milk or cream.Again,nothing beats cream for a sauce as its a little richer i find.Once it begins to thicken,add your cheese,(cheddar,mozzarella,monterey jack) stir until cheese has melted and incorporated and drizzle over your broccoli and cauliflower.

Once they are finished drizzle over your broccoli and cauliflower mixture.Dont pour it as you may not need that much,if you do not use it all.Save it in the fridge,and the next day you can use it on tacos or nachos or even macaroni and cheese.Good luck hun and have a good day!!

Another tip:Often i just season the broccoli and cauliflower really well with salt and pepper then sprinkle some mozzarella cheese on top.Put it in the oven under the broiler and melt the cheese until it is golden.Yum.That is also good.Another thing,make sure your broccoli is cooked as well as the cauliflower before you bake it in the oven.As if you put the cheese sauce on it,in the oven it may burn or stick to the pan.Broccoli and cauliflower take a bit to cook.

As for a side,or something to go with it.I would try to add some cooked rice into the mix.I love broccoli and cheese rice,cauliflower as well.The rice will be your starch.You could even do a pasta,(yum).Take some fettucini,macaroni,or penne cook until tender.Simply add everything in the baking pan.Make sure you mix the pasta,cauliflower,broccoli,and cheese so that in each bite is a little of each.On top sprinkle some more cheese(whichever cheese you used for the sauce) top it off,you dont even have to bake it just put it under the broiler and let the cheese melt.You can serve with garlic bread but that alone sounds very yummy.

this takes minutes to make: About 1/2 pint of milk, a small hanful of plain flour, and a load of grated cheese. Sorry i dont use scales or measures and all my recipes come out fine.
any way heat up the milk but dont boil it slowly add the flour (oh yeah make sure its sived so it wont go lumpy) until its nice and creamy and thick but still able to run a bit then add the grated cheese in to the sauce until melted pour over the broccoli and cauliflower and put a little more of the grated cheese on the top and put under the grill for a few minutes till it melts and crisps a bit. its deliscous!!!

Hi I recently learnt how to make my own cheese sauce to make my own macaroni chesse as i dont like the ones in the packet.
The way I do it is grate the cheese of your choice put it to the side for now, then melt some butter and milk in a sauce pan, Add some flour and stir like mad try and get all the lumps out of you can but dont burn, Take of the heat then add the grated cheese, but back on heat and stir the cheese until it melts into the flour milk and butter. There you have it a gorgeous cheese sauce.

I would recommend using about 4oz flour and 4 table spoons milk. and a big knob of margerine or butter.

Get some Argo Cornstarch. There is a recipe for basic white sauce on the side of the box. Grate some cheddar cheese into the white sauce, its perfect and creamy.

Try some Pepperidge farms 5 cheese Texas toast on the side.

2oz butter + 2oz plain flour. Cook in pan for a couple of minutes. Add enough milk to make a thick sauce - it must boil to become thick. Then add some grated cheddar cheese. Cook until all the cheese is melted & it boils. Add more milk if you want a runnier sauce.

i use this for broccoli and also for mac-n-cheese.

in saucepan melt 3 tablespoons butter. add 3 tablespoons flour. stir. cook about 5 mins. stir occassionally. add 1 1/2 cups milk. bring to boil. whisk constantly until desired thickness add 1 1/2 cups shredded cheese. (we usually use 3/4 cup chedder mixed with 1/4 cup each of shredded swiss and shredded fresh parmesan) whisk until smooth. pour over vegetables or pasta. you can serve immediately or bake to brown top. packet mixes are ok but, sometimes nothing tastes better than homemade. you can serve veg. with chicken or dice up cooked chicken into vegetables and bake to heat through

Here it is - quick and simple!!
1 oz flour
1 oz butter/marg
1/2 pint milk
4 oz grated cheese

Melt the butter in a pan
add all the milk at the same time
take off the heat and sieve in the flour stirring ALL the time .
Put back on the hob and add cheese. Stir till it all melts

That's it - yummy!
