But when I do, he tries to bite me - what's up with that?
He's 3 years old.

Hehehe. There is 2 possible answers for this depending on the cat and his or her mood at the time.
1) Your cat wants a belly rub. My cat does the same thing all the time and LOVES!!! my to rub (not scratch) her belly all the time and does the same thing.
or...
2) he wants to play with you as he would with another young cat. He is exposing his belly, the most vulnerable part of his body for "attack", so that so that you can wrestle. In other words he wants to playfully bite your hand. Playful for him not so nice for you. SO go to scratch him gingerly and depending on which on it is give him a real good belly rub (they usually like it higher up nearly under their under rms sometimes) or find him a more sutable toy than your hand to play with him with.

I am a true cat person, always had them and always will. In my experience my cats always lay on their backs to stretch. I actually believe they are comfortable that way. I once had a cat that did the same as yours. I thought she wanted me to rub her belly but ouch! she bit me every time. My vet said some cats are very sensitive in that area. The cat I have now, he loves to be rubbed in the belly. But he does stretch out on his back when I am not near him. He even falls asleep like that. I bet it is a comfy position.

He's just showing you that he trusts you, while being in a comfortable position.

I have had several cats. Most all of them show(ed) their bellies, but not all of them liked to be rubbed on their belly. Had you started rubbing his belly at an early age, he might have learned to like it.

I agree with the first post, but my sisters dog also does that, she wants belly rubs and when you start rubbing her belly she boxes you off! bless.

My cat does that too. I think it's just her twisted way of getting me in a position where she can play with my hand like a mouse.

He's stretching and showing how completely relaxed he is in your presence by lying with his vulnerable belly up. He trusts that you won't do anything to hurt him or allow anything to hurt him.
