sapri or maratea are hidden jewels on the border of campania and basilicata... beautiful beaches and sea are available all along the coast.. also the restaurants here are fantastic and cheap... may would be a good month to go as there are not many tourists and it's not too hot.. august it can be 40°.. i live here and use these beaches all thro the summer..
a cheap way to stay in italy is to use the agriturismo network... here you will find good accomodation along with a restaurant that will serve traditional local food....

only problem is that very few people speak english so a little italian is essential

It depends on how far south you want to go Because their is a resort on the Island of Sicily called Taromina which is so beautiful hat has the best sandy beaches and the best crystal clear I have ever seen and you can see down to the bottom or as far as the eye can see and also their is one unique thing and that is for the first 2to 3 FT is warm to hot but if you go any deeper then that the water is like a icicle and very cold they keep the beaches very clean and the hotels are right on the beach, including restaurants and the prices are really not bad at all as American I lived their for 13 yrs and have been their many times over the years but now I live in Tx and haven't been since 2000 but I know it hasn't changed at all people from around the world go their every year and if it matters or not it's a semi- nude beach.
You can fly into Catania and take the train up its 30 -45 by local
train.

Lido sits about 15 minute boat ride from Venice.
Capri, off of the Amalfi coast, or just staying somewhere on the Amalfi coast.
Civitivecchia, the port of Rome, about 1 hour outside of the city.
Portofinio area.
All are nice resort areas with good hotels, restaurants, bars, and entertainment, however, most of the beaches will be small and rocky and the water will be chilly and never really warm up, even in the summer.
You might want to consider Greece or Turkey for some nice and affordable beach resorts that wouldn't be too touristy.
In Greece, the islands of Mykonos, Crete, Cyprus, Corfu, or Santorini and even Lindos on the island of Rhodes.
Along the Turkish coast I'd recommend the resorts in Bodrum, Kusadasi, or Marmaris.
Although all of the above would be nice, my preference would be Turkey. The resorts are beautiful and a great value compared to the rest of Europe.

Oh my gosh you have got to go to Sardinia! We lived on the island of Lamaddalena for two years..It's beautiful! If you are going in May the weather is good and there won't be that many tourists. There is a small Navy base there so a lot of the Italians speak English, which makes it a bit easier.....Some other great towns on Sardinia are Alghero, Palau (this is where you catch the ferry to Lamaddalena) Castlesardo, Porta Cervo....Just to name a few!! Go to tuscany!! (i suggest castiglione della pescaia) or abruzzo or sardinia(a bit posh),
the eastern coast of italy is disgusting.. overcrowded...
