Hello all! I am a baker! A close friend of mine who owns a coffee shop asked me to bake for her. I need to take some classes and get everything in order. But my question is what other things should I bake besides biscotti, muffins and scones? What about quiche? What do you stop for in the morning?

You need something savory to balance out the sweets. And a hot dish like quiche sounds great. I used to live in a place where breakfast pizza was very popular. (Scrambled egg, cheese, sausage/ham, etc...)

I'm not a sweets person, so when I go in a coffee shop for a cup of coffee or an iced tea, I'd like something other than to have to settle for a bagel.

I'm an onion roll person, I don't even like sweets for breakfast, I also like the spinach bacon souffle they have at Pantera for breakfast. Also croissants, the flakier the better.

Bagels, large cookies, donuts, breakfast wraps. I love quiche

quick breads are always yummy, and you can make lots of different varieties. also, cookies, brownies, and little fruit tartlets would make a beautiful presentation and give a full spectrum of choices to people who like sweets with their coffee.
