Ah! This is my favorite summer-time drink. I have made it many time's before --I can't give EXACT porportions b/c I eyeball it. But I'll give it a shot!
The ingredients are :
a cinnamon stick
a cup of white, long grain rice (left soakingovernight for best results)
prefrence of sugar (usually about 1/2 cup but I don't like it so sweet)
1-2 Tbls of vanilla
1/2 cup of evaporated milk
2 liters of water
!!**If you soaked the rice, drain the water before begining**!!
grind up the rice in your blender till it's powdery (or non-gritty)
add the cinnamon and grind up till powdery
add the sugar, vanilla and evaporated milk
blend for 30 secs
at this point move it to your 2 liter jug and slowly add the water
with the water, give or take amount for flavor concentration. mix with a long-handled spoon.
Sereve with ice
(before you put in the 2 liter jug, an optional step is to strain it through cheese cloth. My family does not. It's more authentic. Straining takes away some of the flavor and the gritty remains can actually be "recyled" if you plan to make more horchata right away. Just don't drink the gritty stuff!
What I do is just add to taste. A sugestion to have horchata in a snap is to keep ground rice powder on hand(like for chocolate milk) and substitute cinnamon power instead on the stick then follow with the other ingredients (in more modest portions of course) so you can make a single portion. Oh, and take it from this latina, I've never heard of anyone boiling rice for horchata. Yucky! It's supposed to be a cold, fresh drink.

6 tablespoons rice
6 ounces (about 1 1/4 cups) blanched almonds
1 inch cinnamon stick (canella)
3 "2-inch" strips of lime zest (rind only, not the white pithy part) 3/4" long
1 cup white granulated sugar
I N S T R U C T I O N S
The traditional way to make horchata is with a metate y mano. For those of us less adventurous, or simple those with less time, we can use a blender.
Pulverize the rice using a metate y mano or your blender. Grind the mixture as smooth as possible. Combine the rice with the almonds, cinnamon and lime zest. Let this mixture stand overnight (minimally 6 hours).
Place the mixture in the blender jar and blend for at least 3 - 5 minutes until the mixture is smooth and no long has a gritty texture. Add 2 cups of water and blend again for just a few seconds. Place a large sieve over a mixing bowl. Line the sieve with 3 layers of damp cheesecloth. Pour in the rice mixture, a little at a time and keep stirring to help the mixture go through the sieve. Once all the liquid has passed through to the bowl gather the cloth together at the top, give it a twist and squeeze out any additional liquid.
Now add 2 more cups of water and stir in as much sugar as you'd like, to taste. If the mixture is too thick, add some additional water.
Cover and refrigerate. The drink should keep several days, refrigerated.
Serve in a tall glass over ice.

Mexican Horchata:
Tastes sooo yummy, you will like it too!
15 min 15 min prep
6 servings
1 cup long-grain rice
4 cups milk
1/2 cup sugar
1 teaspoon vanilla
1/2 teaspoon cinnamon
ice
1. Place the rice in a bowl with enough hot water to cover.
2. Let the rice sit overnight.
3. Next day, remove the water.
4. Place 1/2 cup of rice, and 2 cups milk in a blender.
5. Blend until rice is all ground up.
6. Mix in 1/4 cup sugar,
7. 1/2 tsp. vanilla,
8. 1/4 tsp. cinnamon.
9. Do the same with the other half of the ingredients.
10. Strain through cheesecloth (or whatever).
11. Serve over ice.

I just made horchata this weekend!
Horchata
Ingredients
1 cup long grain rice, rinsed
2 quarts water
1 cinnamon stick, broken into pieces
1 teaspoon pure vanilla extract
1/2 cup white sugar
Method
In a large saucepan, combine rice, water and cinnamon stick. Set aside for 3 hours. After 3 hours, bring to a boil, reduce heat, and simmer for 30 minutes. Allow to cool. Puree rice mixture in a blender until smooth. Strain through cheesecloth or a fine sieve. Flavor with vanilla and sugar to taste. Chill, and serve over ice.

There is an easy way and a hard way..... I only know the easy way. You can find the mix in your grocery store in the section where Kool- Aid is found or in the Mexican Import section of the store.
