Here's one for you .............don't panic, try this
Poulet avec les tomaoes et le vin rouge et l'ail
( chicken with tomatoes, red win and garlic )
Ingredients..
2 1/2 - 3 lb Chicken (large pieces)
2 Whole spanish onions (finely diced)
4 Fresh large plumb tomatoes (rough chopped)
(or diced tinned 400gms x 3)
100 mls Virgin olive oil
3 Whole cloves garlic (fine chopped)
1/3 Btl of full bodied Red wine
4 Fresh leaves of basil (uncut)
4 Fresh tarragon (stems)
Black milled pepper (good twist)
Salt
Seal (brown) chicken in shallow skillet with a little oil, place to one side to rest. Add to pan onions, garlic and sweat until they
are transparent, add red wine salt, pepper and allow to reduce
(thicken),add tomatoes stir, reduce heat to slow simmer then
add herbs slow stir and leave (you will see a change in colour)
to a deeper red, return chicken to pan toss in sauce and serve
Lots of warm buttered garlic bread would be a great addition.

Italian Chicken and Tomatoes:
50 min 15 min prep
4-6 servings
4 chicken breasts, cut into bite size pieces
1 can Italian-style stewed tomatoes
1 chopped tomato
1/2 cup chopped green peppers
1 chopped onion
1/2 cup sliced mushrooms
1/2 cup chopped green onions
1 teaspoon oregano
1 teaspoon thyme
1/4 teaspoon salt
1/8 teaspoon pepper
#1 Cook chicken until done in a skillet using olive oil and a touch of butter for flavour over medium heat.
#2 Add in tomatoes to deglaze the pan and then add in the rest of the ingredients.
#3 Cook for 20 minutes on medium low temperature until vegetables are tender.
#4 Serve over white rice or pasta.

There is a recipe on the website for kraft foods called Cheesy Salsa Chicken & Rice. The ingredients are velveeta, salsa, chicken and Minute Rice. My kids freak out when the see the peppers in it though, so instead of using salsa I use diced tomatoes.

There are a couple of websites that allow you to put in your favorite ingredients and then posting up recipes accordingly. I can't recall their names but have come across them several times while surfing the web. Maybe try google and see what you come up with!
I had a great chicken recipe that also incorporates pasta, tomatoes, calamata olives, feta cheese, basil and several other ingredients in a very flavorful sauce. Was absolutely terrific!

KING RANCH CHICKEN CASSEROLE
1 large onion, chopped
1 large green bell pepper, chopped
2 tablespoons vegetable oil
2 cups chopped cooked chicken
1 (10 3/4-oz) can cream of chicken soup, undiluted
1 (10 3/4-oz) can cream of mushroom soup, undiluted
1 (10-oz) can diced tomato and green chiles (or equivalent amount fresh diced tomatoes)
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon pepper
12 (6-inch) corn tortillas
2 cups (8 oz) shredded Cheddar cheese, divided
Sauté onion and bell pepper in hot oil in a large skillet over medium-high heat 5 minutes or until tender. Stir in chicken and next 7 ingredients; remove from heat.
Tear tortillas into 1-inch pieces; layer one-third of tortilla pieces in bottom of a lightly greased 13- x 9-inch baking dish. Top with one-third of chicken mixture and 2/3 cup cheese. Repeat layers twice.
Bake at 350° for 30 to 35 minutes.
Note: Freeze casserole up to 1 month, if desired. Thaw in refrigerator overnight, and bake as directed.
Yield: Makes 6 to 8 servings

Chicken Caliente Casserole
Butter, for greasing casserole
2 1/2 cups large-diced cooked chicken
3 cups cooked rice
1 cup sliced celery
1 cup sliced green bell pepper

1/2 cup mayonnaise

1 cup drained diced tomatoes (canned or fresh ok)
2 tablespoons freshly squeezed lemon juice
1 tablespoon chili powder
2 teaspoons fine salt
1/2 teaspoon garlic powder
1/2 teaspoon hot sauce
3 tomatoes, cut into wedges
1 1/2 cup corn chips, crushed
Preheat the oven to 350 degrees F. Butter a 2-quart casserole dish.
In a bowl, combine all the ingredients except the chips and mix well. Transfer the mixture to the buttered dish, top with the chips, and bake until hot and bubbling, about 30 to 35 minutes. Serve immediately.

Here is a place to go to to put in the ingredients that you have. You can also put in things that you do not want (for instance you could be alergic to things and exclude them.) When I put in chicken and tomato, it came up with 800 recipes.

Sautee chicken breast strips in olive oil, garlic and white wine. add diced tomatos and par boiled linguine... toss and serve.
for an alfredo version
add a little heavy cream and grated parmesan and reduce a bit over high heat before adding tomatos and linguine

there are several. one easy one is chicken and tomato burritos. all you need to do for additional prep is cook some rice maybe add cheese and hot sauce to the mix and you have a yummy easy meal!
-tortillas-slice or dice tomatoes-rice-cheese-enchilada or hot sauce to top-bake@350 for 20 min. until crispy! enjoy!!!

BRAISED CHICKEN WITH GARLIC, TOMATOES,
POTATOES
2 tbsp. oil
1 (3.5 lb.) chicken, cut up
1 c. dry white wine
1 c. chicken broth
24 lg. cloves garlic, peeled
4 lg. firm roma tomatoes
4 sm. thin skin potatoes, cut in half lengthwise
Brown chicken well in oil and remove. Reduce heat to medium; add garlic and tomato halves, cut side down. Cook until lightly brown (2 minutes). Lift out and set aside, return chicken to pan and add wine, broth, and potatoes. Cook and simmer (25 minutes) until potatoes are tender. Set tomatoes on top of chicken, continue to simmer covered until meat is not pink (5 minutes). Lift all out and set on platter. Keep warm. Boil pan juices uncovered on high heat until reduce to about 1 cup (5 minutes). Pour over chicken and potatoes on platter.
NOTE: I add more potatoes and tomatoes. Great with French bread!
CHICKEN WITH FRESH TOMATO SAUCE
You can use turkey cutlets or fish fillets in place of the chicken and grill rather than broil them.
3 med. size ripe tomatoes, cored & chopped
4 green onions, chopped fine
1/4 c. chopped fresh coriander or parsley
2 tbsp. olive or vegetable oil
1 tsp. lime or lemon juice
1/4 tsp. ground cumin
1 tsp. minced green chili, fresh or canned (optional)
2 skinned & boned chicken breasts (about 1 lb.), halved & pounded to 1/4" thickness
1/8 tsp. black pepper
Coriander or parsley sprigs
1. Preheat the broiler and lightly grease the rack. In a small bowl, combine the tomatoes, green onions, coriander, 1 tablespoon of the olive oil, the lime juice, cumin and if you like the chili; set aside.
2. Brush both sides of each chicken breast with the remaining olive oil, then sprinkle with pepper.
3. Broil the chicken 4 to 5 inches from the heat for 3 minutes or until lightly browned. Turn and broil 3 minutes more or until no longer pink when cut near the center.
4. Arrange the chicken on a small heated platter, ladle the sauce to one side and garnish with the coriander sprigs.
CHICKEN AND STEWED TOMATOES OVER
FETTUCINI
2 boneless chicken breasts, skinned
6 tbsp. Parmesan cheese
3 tbsp. flour
1 tbsp. olive oil
2 c. sliced mushrooms
1 onion, chopped
1 tsp. rosemary
1 can Italian style stewed tomatoes
Coat chicken with 4 tablespoons cheese and then flour. Salt and pepper to taste. In skillet cook chicken in oil over medium high heat until done. Remove.
Cook mushrooms, onions and rosemary until soft. Add tomatoes. Cook uncovered until thickened a little. Spoon over chicken. Top with remaining cheese.
