I agree that this is troublesome, not only because it's confusing what the meaning of "truth" is, but also because it often means that someone isn't answering the question, but rather is just proselytizing or repeating the same catchphrase again and again. I have no problem with religious belief, but this is Yahoo! Answers; if you're not here to actually consider and answer things, but just to repeat a certain mantra you like, then you aren't doing anyone any good.
What I often see is:
Person A: *reasonable, but perhaps troubling, question about religion*
Persons B, C, D, E, F: "Jesus is the Truth! / I'll pray for you. / You're going to Hell! / etc."
The problem with these sorts of nonanswers should be obvious. If someone is raising some sort of doubt about Christianity, Jesus, God, or religion in general, then saying "[What I believe] is the Truth!" or "I know that [what I believe] is true!" cannot in any way help answer that question, because it really essentially amounts to "I'm right, because I say so"--any claim to truth without a logical justification amounts to that. How would you like it if all atheists, rather than actually responding to your questions, just said "The absence of God is the Truth!" or "I know God doesn't exist, and that's all there is to it". There'd surely be next to no fruitful discussion, exchange of ideas, or learning whatsoever.

Jesus said that he came to earth to "bear witness to the truth" when he was speaking to Pontius Pilate. "What is truth?" was Pilate's response - indicating that Pilate agreed with what you said. However - Christian faith is not based on incredulity - it's based on evidence that we see in our lives that prove beyond any doubt the TRUTH from the scriptures.
Hebrews 11:1 says that Faith is the ASSURED expectation of things to come. The EVIDENT demonstration of REALITIES though not beheld.
Faith is based on evidence and on assurances and on reality. It is not "blind".
It is the truth that Christ came to Earth and died as a ransom for the sins of the world.
It is the truth that he, together with his father, Jehovah, will bring an end to human suffering.
We believe it because the evidence from the Bible, from creation, from what we see all around us on a daily basis proves it to be so.
Your illustration about your car isn't comparable because your car can fail. Your car is not perfectly reliable. God and Christ cannot fail. What they say WILL come true.

You feel what's the truth, and you are more truthful when you seek to walk in Jesus sandals, especially because he is of Truth as God is Truth.
Yes you have faith that your car would get you to work, and that's the truth... but your car is not the foundation of the truth.
truth = something you feel is the truth
or
Truth = God

Truth is something that is eternal. In other words, it is true in all times and in all places. Truth doesn't change. Truth, in a religious frame, is something you feel inside you. I know Jesus is the Christ because it feels right to me. It is a truth because it is eternal. He is the Christ for all people in all times and places. I know the Book of Mormon and the Bible are Holy Scripture, the Word of God given to His prophets to guide mankind through mortal life. I know this because I have read them, practiced their precepts, experimented on the word and feel comfortable and at peace inside my mind and heart that they are indeed right. This knowledge comes from acting upon faith. Faith is the substance of things hoped for, the evidence of things not seen. In other words, faith is the motivation that makes you move forward even though you can't see what is in front of you. Driving in the fog takes faith sometimes. You have faith that the road will continue in front of your wheels. You have faith that the other drivers on the road will keep going just as you are. After you have tested your faith you then have knowledge that the road does indeed continue in front of you because you have seen it and tried it and it has worked for you. However, you still don't know about the other drivers on the road. You continue to have faith in them to know what they are doing so as not to cause an accident. Going to church, reading scriptures, helping and serving one another in the hope of a glorious resurrection takes faith. You continue on this road of faith because you have tried it and it feels good to you. Christ said, "if any man will do my will, he shall know of the doctrine, whether It be of God or if I speak of myself." So it is that as we do His will, our faith grows into knowledge. It is right for us because we feel that it is right and invite others to share in that same experience and knowledge. Faith and truth go beyond the scientific experimentation that is limited to the five senses.
Of this I testify, a truth that I have come to know. Amen.

When God reveals truth of Jesus Christ there is no more debate....you know it and don't mind saying it....
"If any man teach otherwise, and consent not to wholesome words, EVEN TO THE WORDS OF THE LORD JESUS CHRIST, ....he is proud, knowing nothing, but doting about questions ans strife of words, whereof comes envy, strife, railings, evil surmisings, perverse disputing of men of corrupt minds, and destitute of the truth....."
