don't make, buy! Get WHITE marzipan not the yellow stuff and then get some peach food colouring and add a teeny tiny drop at a time. If you can't find peach food colouring, (try specialist cake decorating shops - loads on the net) use a little tiny bit of coffee essence such as camp coffee
http://www.cakecraftshop.co.uk/ - you might even find an actual 'flesh' colour here

Depends what race you're going to make your marzipan people. If they're caucasian, you just use so called "flesh" coloured food colouring. There's a link below to one manufacturer - you'll find "flesh" on the left if you scroll down.

1 kilo ground almond.
1/2 " castor sugar
3 well beaten egg whites added slowly and mixing all ingredients well
together.
Add a few drops of vanilla essence.
Now what tone of skin colour do you want?
