well, the best way to make beef stew is to start with the right meat. stew meat, which is sirloin, or chuck, is the best. in a heavy bottomed pan add a few tablespoons of oil and heat until it begins to smoke a little. in the meantime dust the meat with flour, salt, and pepper. sear the meat in the oil until its nice and brown and crispy. remove the meat and add some onions, carrots, celery. and potatoes. saute this for a few minutes and add about a tablespoon of tomato paste. add the meat back into the pan and add water, enough to cover the meat plus 1/2 an inch. reduce the heat to a low heat abd add a bay leaf, and a few sprigs of fresh parsley. cook until the meat is tender, and season with some salt and pepper at the end....good eating.

The trick is to cook it for a long time. I'll tell you how I do it and you can try it if you like.

I get some diced stewing steak and coat it in flour then put it in a large saucepan with a little hot oil in the bottom and keep stirring it till it's browned off. Then add and cook some chopped onion. Then I add a couple of teaspoons of english mustard and stir that in, then a good squeeze of runny honey and do the same, then again with about a serving spoon of tomato puree. Then I add a half and half mixture of beer (bitter/ale) or stout (guiness) so that there is a good 4" of liquid above the level of the meat. Then just cook on the hob for about 2 hours (you need to stir it well every 15 mins or so). If you want carrots or something in there too, add these about half an hour before it's finished. I also add dumplings at the end.

Hi This is a nice beef stew.
First of all you put a little oil in a pan, then put your chopped up onion and coat the beef in flour salt and pepper then add to the onion, then when the meat is browned off, then you add your vegetables, like carrot turnip parsnip cook for a while keep stirring, then you use Knorr beef stock cubes two or three add enough hot water, then add a bouquet garni made by Schwartz, you can add Tomato Ketchup to flavour as well, and then bring to the boil and then turn down to simmer until the meat is cooked. Enjoy.

Take your meat and brown it in a pan first, just enough to brown all exposed sides of the meat pieces. This is called searing and it is what keeps the flavor in your meat during the cooking process.

then add water or better beef stock or even soup enough to cover all the meat well, and put the meat in to the pot, add onions and seasoning and put it on to boil. Cover the pot to keep in the steam. check on it so it does not burn and when the meat is soft and tender add your veggies and potatoes and a little red wine if you like. let it 'stew" on a medium low heat until the veggies are soft and tender and the meat is practically falling apart. to thicken the "juices" add some corn starch and beef boulion that you have mixed and made a paste of with juice from your pot. Add a little of this at a time and constantly stirr until the stew is as thick as you like.

Take the stew meat and toss it in flour to coat it slightly. Put the meat into the pot and brown in a little oil over medium heat. When the meat has browned, put water in the pot to about half full. Cut up onions, potatoes and carrots and put into pot and add seasonings to taste (salt, pepper, etc). Put 2 or 3 tablespoons of flour into a measuring cup and add about 1/2 cup hot water and stir to make a rue. Pour that rue into the pot with the stew. Boil on medium heat, stirring occasionally, and adding more water and seasonings if necessary. When all the veggies have softened and the meat is thoroughly cooked, it is ready to enjoy.

Jamie Oliver has a fantastic stew recipe in his book Jamie's Dinners. I serve this to guests quite often in autumn/winter and everyone has loved it. Let me know if you want the full recipe - but I think this book is worth buying as it contains some great recipes
