No! The textures are very different. The instant pudding will set up before it should and the result will be an inconsistant texture.

It really depends on the recipe. If you are just layering or using it as a filling I don't see a problem, but if it's a base or being mixed with other ingredients it is best to follow the instructions.

My sister did exactly that when making a pie for Thanksgiving and with didn't turn out at all! It was very disappointing, we were all looking forward to it! The filling was a couple millimeters tall, didn't rise at all :( Don't risk it.
