This is a nice hot meal. You could leave out the wine if you are not a wine drinker:

Cabernet Stew

2 pounds stew meat
Kosher salt and freshly ground black pepper
3 tablespoons olive oil
4 medium carrots, sliced
1 large onion, diced
2 tablespoons all-purpose flour
2 (14 1/2-ounce) cans chicken broth
2 cups Cabernet Sauvignon
1 cup canned crushed tomatoes
3 sprigs fresh rosemary
2 medium russet potatoes, cubed
2 handfuls fresh green beans

1. Saute onions in olive oil in a 6-quart pot over medium heat until soft.

2. Add stew meat, flour, salt, and pepper. Brown the meat on all sides.

3. Add carrots, chicken broth, wine, tomatoes, and rosemary. Bring to a boil.

4. Reduce heat and simmer for 50 minutes on low heat. Stir occasionally.

5. Add potatoes. Cover and cook another 45 minutes. Stir occasionally.

6. Add beans and cook for 5 minutes longer.

Tomatoes filled with assorted vegetables - Pomodori ripieni di verdure

4 ripe but firm tomatoes
300 g (10 1/2 oz) assorted, frozen
vegetables
4 tablespoons puréed tomatoes
2 tablespoons dried chives
2 teaspoons dried bay leaves
2 tablespoons dried parsley
3 tablespoons extra virgin olive oil
2 tablespoons apple vinegar, if you like
Dry breadcrumbs
Salt

Wash the tomatoes accurately, cut them crossways and scoop out their seeds and part of the flesh with a spoon(you can add this flesh to the vegetable mixture, if you want).
Salt them and turn out on a platter to drip them (at least 30 minutes).
Pour the frozen assorted vegetables into a pan with abundant, salted boiling water.
Bring to the boil again and cook for 10-15 minutes. Drain them very well and put in a little bowl; add the puréed tomatoes, aromatic herbs, vinegar and 2 tablespoons olive oil.
Stir and taste; add salt only if necessary. Put the mixture apart.
Preheat oven to 180°C (350°F) and oil a baking pan with the remaining olive oil. Fill the tomatoes with the vegetable mixture, sprinkle with dry breadcrumbs and bake for about 30 minutes. Serve them lukewarm.

Hi Sara,
How about you make a nice warm tuna salad on a bed of mixed leaf lime dressed salad with a dressing of extra virgin oil, fresh basil, cucumber and sliced tomato served with hot steamed pasta with cracked pepper and warm garlic bread
For flavour enhancement a crisp refreshing glass of Grans Trittenheimer Riesling Spatlese 2002 would be just fantastic
Eyes closed and you could be anywhere.........
bon appetite

How about a stir fry or cous cous with roasted vegetables? If you've got peppers how about stuffed peppers with cous cous. Yummy. Good luck.
