Toss it in (sweetened) lemon juice

I always squeeze fresh lemon juice over the fruit & this completely stops any browning from occuring. There is enough sugar in the syrup you might add or orange juice if you use this, to stop the lemon flavour from overpowering the fruit salad.
SO, cut up the fruit & squeeze lemon juice over as you go. Then add your chosen syrup which should cover the fruit completely. Leave it covered in the fridge.
Lovely!

It has to do with an enzyme that is activated when you cut the fruit. You have to halt the reaction. Add a few table spoons of and acid like lemon juice. There are also several produces out there like the "FRUIT FRESH" mentioned earlier, but they do not add flavor, so I try to avoid them.

Alton Brown of "Good Eats" has a really good recipe called "Fruit Salad with Vanilla Dressing" at http://www.foodnetwork.com/food/recipes/recipe/0,,FOOD_9936_32757,00.html?rsrc=search

Its quite easy to keep that fresh look, any citrus juice add it to the fruit salad and those apples wont go brown etc. It acts like a sort of preserving agent.

Use orange-lemon juice as liquid. Add apple, kiwi, pineapple or banana just before serving. Sprinkle vitamin C powder over surface and store in fridge in glass airtight container. Make small amounts and consume quickly.

when making a fruit salad you should hold off the apples until the last minute as apples react to the acid in oranges and especially kiwi. just leave the apples out and add them as you need them. You could boil up water and add small amount of sugar, let it cool and add to fruit. this airlocks the fruit preventing oxygen from breaking it down. JUST REMEMBER THE APPLES OUT UNTIL LAST MINUTE!!

It usually doesn't last that long as the freshness goes anyway and you can't stop it. You could delay by keeping in an airtight container in the fridge but probably need to eat it within one to two days...
