Anyony know what I can do with thinly (1/4") sliced boneless chicken breast. I was going to bread it and fry it. However, cooking for a soldier is tough, he's kind of bored with that dish by now. Any ideas that might go with mashed potatoes, frozn veggies, and baked cream corn? Anyone.. please!

I found this great recipe, it's fantastic!

You need:
cream cheese with chive and onion
slices of bacon
and the thin chicken breast.

Preheat oven to 400.
Spread 3 tablespoons cream cheese over each. Sprinkle with salt and pepper; roll up. Wrap each with a slice of bacon. Place, seam side down, in a 13x9x2 inch baking pan. Bake, uncovered, at 400 for 35 to 40 minutes or until juices run clear. Broil 6 inches from heat for 5 minutes or until bacon is crisp.

I use less cream cheese, usually just a tablespoon or so. It's delicious! I hope you enjoy it! I don't broil mine either, but I am sure that would make it even better!

Another easy idea is to just cook it up and cover with some pasta sauce, like chicken parmesan. Or melt cream cheese and salsa, then cut up cooked chicken and place inside tortillas.

The great thing about chicken, it's so versatile!

I would scrap the potato & corn and instead make a stir fri with rice. But if you must have the potatoes & corn- try chicken cordon blue casserole. You put the chicken, ham chunks, swiss chesse and a little milk in a casserole dish and bake it at 350 until the meat is white and the cheese is bubbling.
Or you could do a chicken pot pie.... or chicken skewers with teryaki sauce....

I mix sweet flaked coconut and either Panko (Japaneses cracker crumbs), or almond meal. Fry lightly in ghee. Serve with rice. When I make the rice I put a can of sweetened coconut milk, and water.
Make your veggies...This is a great looking plate!

If you really want to be creative.. deglaze the pan with apricot jelly, and use a little of the coconut milk to make a nice sauce for over the chicken.

Season with salt, pepper, & garlic.
Line a dish with foil, add slices of butter, green, red or yellow peppers, & onions.
Lay chicken on top & add more butter, peppers & onions.
Fold foil, so it's creates a pouch.
Cook in the oven at 325 degrees for about 1 hour.
Chicken comes out every tender & full of flavor.

I just made this recipe about two weeks ago and my man and kids LOVED it. I used Tyson Thin and Fancy chicken breast (thinly sliced chicken)!!

Country Lemon Chicken
prep time 10 min
cook time 17 min

Ingredients:
2tbsp flour
1/4 tsp dried thyme leaves (optional)
1/2 tsp salt
1/8 tsp pepper
4 boneless, skinless chicken breast
1 cup chicken broth
4 tbsp butter
1 small onion, chopped
1 clove garlic, finely chopped (I used garlic powder)
1/4 cup lemon juice

Directions:
1. combine flour, thyme, salt and pepper. dip chicken into flour mixture. combine remaining flour mixture with broth; set aside.
2. In skillet, melt 2 tbsp butter. Over med-hi heat, brown chicken. remove chicken and set aside.
3. In same skillet, melt remaining 2 tbsp butter and cook onion, stirring occasionally, until golden, abt 3 min. stir in garlic, cook 1 min, stir in lemon juice, cook 1 min.
4. Add reserved broth mixture and bring to a boil. Return chicken to skillet and simmer uncovered until chicken is thouroughly cooked, abt 5 min.

Baked chicken fingers - cut chicken in strips and pieces, dip in milk (or Italian salad dressing), then roll in breadcrumbs or cornflakes. Fry or bake (I tend to bake stuff with just a dribble of oil).

Marinade the chicken in honey and soy then put on kebab sticks & shallow fry, grill or BBQ.

cut up some mushrooms, onion and garlic.Add some green pepper,2 knobs of butter and white wine, then add chicken and close evreything up in foil, whack it in the oven and youll be surprised at how good it tastes.

change the coating to breadcrumbs with parmesean cheese and serve with pasta....
