Ingredients
4 cups mashed potatoes
1 large egg
1 cup milk
1 cup cornmeal
1 cup flour
1/4 tsp garlic powder
1/2 tsp onion powder
2 tbsp olive oil
Preparation
Shape mashed potatoes into 1-inch thick patties ( 4 inch diameter).
Beat milk and egg.
Mix garlic powder, onion powder, flour and corn meal in a soup dish.
When ready to cook, heat oil in flat skillet.
Dip potatoe patties in egg mixture, both sides.
Dip patties in flour mixture, both sides.
Fry patties in oil until brown on both sides.
Dry patties on paper towels and serve.

The things I typically add to mashed potatoes, either individually or in combination are:
-Chopped chives/scallions
-Crumbled bacon
-Shredded cheese
I don't usually add fats/liquids except for a bit of butter, but you can add any of the following for richer/creamier variations:
-Whole milk
-Sour cream
Twice-baked/stuffed potatoes:
Get large Russet potatoes
Wash/scrub potato
While potato is still wet, sprinkle first with ground pepper, then with salt
Bake potatoes as usual
Cut potatoes in half lengthwise
Scoop out potatoes with a spoon, being careful not to puncture/tear the skin
Make mashed potatoes from the scooped out part (add a little butter or sour cream if desired)
Fill potato skins equally with the mashed potatoes
Sprinkle tops with any or all of the following:
-crumbled bacon
-shredded cheese
-coarse-ground black pepper
-paprika
Put potatoes back in oven to heat up
(potatoes can be prepped ahead of time, stored in fridge/freezer and then just put in oven to heat)
Some people will scoop out the insides and just eat that, but I like to eat the peels too.

I cheat and use an instant potato mix. I add a healthy tablespoon of pesto and a handful of grated cheddar cheese. Oh man is it good! If hubby doesn't like extremes, cut down on the pesto.

U can add parsley, or chives, or bacon bits or diced green onion to the smashed tates and yes U can use buttermilk. Taters are open to all sorts of add-ons.

Add buttermilk, sour cream, cream cheese - all are good. The other thing to do is vary the seasoning more. Dill is great. How about curry powder?

Saute some onions, green pepper and mushrooms and put them in with your recipe, also leave the skin on when you mash the spuds. and also you can add shredded Cheddar cheese and make it cheesy.

Add a small chopped onion when boiling potatoes. Eat with butter or Drain and add cheese ,sourcream,bacon bits.

You could try adding mayonnaise. Oh! And you could try adding in seasoned fried egg! It's really different and tastes good too! You fry the egg/s that you've already salt too and you cut them up and add them to the mashed spuds!

Try leaving the skins in them...thats really good to me. And I guess you could use buttermilk in them but be ready for a really buttery rich taste.

try some lemon pepper seasoning with chives. Not to much seasoning it salt based.
