Have a look on the link below. I haven't stayed there but saw an article about unusual hotels in the Independant and this one looks amazing.

make sure you dont tell her nothing just say 2 her babe make sure yr not busy so an so night ive got a surprize. so she can get very happy an curious.
women love 2 be surprized
look up a decent hotel on google at yr price range.
book it
then give your wife some money an say here babe go get something thing nice to put on on so an so day
she would have a big smile on her face.
then on the day of yr outin blind fold her an take her all the way to the hotel
make sure u whisper 2 the people cause you dont want her to know where she is.
then sit her down in the hotel room and hand her a present you wrapped up.

you will have the best night ever

good luck

Assuming you want luxury at the price it comes at;

Try Lucknam Park Hotel in Bath.

Also try and of the hotels which are part of the 'Leading Hotels of the World' group. Use the link below to their hotels in England
http://www.lhw.com/searchresults.aspx?countryid=30&cityid=0

or 'Small Luxury Hotels of the World'.

Many of the well known chains as Hilton/Ramada etc cater mainly for the business traveller and will not give you that special stay you will want for your wife on her birthday so I would stay away from those. Look up reviews for any chain hotel as they vary from city to city.

There are some great hotels in Scotland also. Edinburgh would be nice for a weekend and has some fine hotels. Of course there are other hotels in some of the wilder parts of Scotland offering luxury also. There is a nice hotel at Turnberry (best not go if you are golfer just in case your wife gets the wrong impression. Perhaps for your birthday in that case)

Tripadvisor.com is a good website to read real reviews for most hotels around the UK.

Lastminute.com offers some great last minute deals on luxury hotels in London also if you are willing to chance it..

What about Dublin !!
Good Luck.
