It's "skam till sägandes", not "sågandes", so it's no wonder you didn't find it in a dictionary. Literally it's "Shame to be a-saying", but it's a set expression, and the meaning is "I'm ashamed to say" "Nog" is not absolutely necessary to translate - it just adds a little caution to a statement, like "probably", "I suppose", "surely". So a translation would be this:
"The only thing I learned properly during my exile in convent was probably, I'm ashamed to say, Latin", Sigrid replied.

First of all, it is not "sagandes" with a circle above the a, but rather, with the umlaut (two dots) above the a. That is one of the things that could have confused you.
The sentence, which I guess is from Kristin Lavransdatter, means:
"I must admit (and to my shame), the only thing I really learned during my banishment to the convent was Latin," answered Sigrid.
I must ask why you are reading this book in Swedish, since it was written in Norwegian.
