Ingredients:
2 large eggs
6 ounces sugar
5 ounces soft butter or margarine
1 lemon, grated zest only
6 ounces super-sifted self-raising flour
4 ounces milk
pinch of sea salt
***For the lemon syrup:***
5 ounces icing sugar
1 lemon, juiced

Directions:

Preheat the oven to 180:C (350:F/Gas 4). Line the bottom of a well-oiled 23 x 13 x 7.5cm (9 x 5 x 3in) loaf tin with baking parchment. Put the eggs and sugar in the bowl of the food processor and process for 2 minutes, scraping the sides down once with a rubber spatula. Take off the lid and drop spoonfuls of the soft butter or margarine on top of this mixture, together with the lemon zest, then pulse just until it disappears. The mixture should now resemble mayonnaise. Add the flour, milk and salt, cover and pulse just until the mixture is smooth in texture and even in colour, scraping the sides down with a rubber spatula if necessary. Do not over-beat or the cake will be tough. Spoon the cake mixture into the prepared tin and bake for 45 minutes, until golden brown on top and firm to the touch. Remove from the oven and stand the tin on a cooling rack. To make the syrup, gently heat the sugar and lemon juice in a small saucepan, stirring until a clear syrup is formed, about 3 minutes. Do not boil. Prick the warm cake all over with a fork, then gently pour the syrup over it, until it has been completely absorbed. Leave until cool, then carefully ease the cake from the baking tin and remove the baking parchment. Just before serving, sift a little more icing sugar on the top. Serve in generous slices.

175g (6oz) margarine or
softened butter
175g (6oz) caster sugar
3 large eggs
175g (6oz) self-raising
flour, sifted
1tsp baking powder
Grated rind of one lemon
pinch of salt

For the drizzle topping

125g (4oz) of granulated sugar
60ml (2fl oz) of lemon juice

1. Heat the oven to 180C (gas mark 4). Lightly grease an 18cm (7in) round cake tin with a little extra butter or margarine and cut a piece of greaseproof paper or non-stick baking parchment to fit the base of the tin.
2. Put all the ingredients in a large mixing bowl and beat with a wooden spoon or a hand-held mixer for 1 minute, or until just combined. It's important not to beat the batter too much just long enough to make it smooth.
3. Pour or spoon the mixture into the tin, smooth the top and bake on the middle shelf of the oven for about 45-50 minutes. The cake is cooked when it looks well risen and golden; the top should spring back when lightly touched with a fingertip. Another test is to insert a skewer into the centre of the cake - it should come out clean.
4. Let the cake sit in the tin for 5 minutes, then gently run a knife around the edge and turn the cake out onto a wire rack to cool.
5. When cooked and cooled, prick the top with a skewer. Combine the granulated sugar lemon juice, without letting the sugar dissolve. Pour the sugar mixture over the top of the hot cake. The juice will sink in and the sugar will form a crunchy topping.

TIPS
Using margarine, rather than butter, works really well for this cake and saves you the bother and time of having to soften the butter before you start.

Don't be tempted to open the oven before 40 minutes - you'll regret it!

Put the cake in an airtight container and it can be stored for up to 2 days.

Basic Victoria sandwich mix.{ 2 eggs, 4oz self raising flour,4oz butter or similar,4 oz caster sugar. Double,treble for a larger cake]
Add lemon zest to mixture.
When cool sandwich with butter filling[ icing sugar & butter or similar ]again with lemon zest added.
On top spread soft icing. Icing sugar mixed with water & lemon juice [ a litte water goes a long way so add little by little]
Decorate with lemon peel/lemon zest.
So have a few lemons to hand.

i no this isnt a recipe but buy one from asda late at night when the price is put down if you want it cheap, if not just buy it in the day and add custard man it is soooooooooooooooooooooo nice good luck x x x
