ok so say im trying to reach a specific amount of kj's or calories and it is vital for me to reach that target each day, for example 14,000 kjs. So i also have a protein shake with milk which gives me 2000 kj's. Does this protein shake contribute to my food intake target? Obviously id need the protein, but i also simply need to eat alot of calories so therefore does by drinking this protein shake take off 2000 kj's i need for my target, or do i still need to actually eat 14,000kjs because for me without a protein shake that would be very hard.

whatever you put in your mouth is accounted for, no matter what. Protien shake with milk got lots of protiens, carbs, and fat depending on milk and protien shake.

What you are doing is a healthy way to put fat, try to target to put 1.5 grams of protien for every 1lb of your body weight, 1.5 to 2 grams of carbs per 1 lb, and ofcourse include something like 30 to 40 % fat.

Dont forget to hit the gym! Best way to increase weight and look good ;)
