Turkey-Apricot Stir-Fry
* 12 ounces turkey breast tenderloin steaks
* 1 small onion, chopped (1/3 cup)
* 1/2 cup apricot or peach nectar
* 2 cups fresh pea pods, strings removed, or one 6-ounce package frozen pea pods, thawed
* 3 tablespoons soy sauce
* 1 small red or green sweet pepper, cut into 1-inch pieces
* 2 tablespoons rice vinegar or white vinegar
* 2 cups hot cooked couscous or rice
* 1 tablespoon cornstarch
* 1/4 teaspoon ground red pepper
* 1/2 cup dried apricot halves, cut in half
* 1 tablespoon cooking oil
1. Cut turkey into thin bite-size strips. Set aside.
2. For sauce, in a small bowl stir together nectar, soy sauce, vinegar, cornstarch, and ground red pepper; stir in apricots. Set aside.
3. Pour cooking oil into a wok or large skillet. (Add more oil as necessary during cooking.) Preheat over medium-high heat. Stir-fry onion in hot oil for 1 minute. Add fresh pea pods (if using) and sweet pepper; stir-fry 1 to 2 minutes more or until crisp-tender. Remove vegetables from the wok.
4. Add turkey to the hot wok. Stir-fry for 2 to 3 minutes or until no pink remains. Push turkey from the center of the wok.
5. Stir sauce. Add sauce to center of the wok. Cook and stir until thickened and bubbly. Return cooked vegetables to wok. Stir in thawed frozen pea pods (if using). Stir all ingredients together to coat with sauce. Cook and stir 1 minute more or until heated through. Serve immediately over hot cooked couscous or rice. Makes 4 servings.
Make-Ahead Tip: Prepare vegetables; cover and chill up to 4 hours.
THAI STIR FRY
2-3 Tbs. Oil For Stir Frying
3 Cloves Minced Garlic
2 Tbs. Thai Kitchen Roasted Red Chili Paste
1 Tbs. Brown Sugar Or Thai Kitchen Coconut (Palm) Sugar
1-2 Tbs. Thai Kitchen Fish Sauce (To Taste)
12 Oz. Assorted Fresh Vegetable (I.E. Zucchini, Yellow Squash, Snow Peas)
In Hot Wok Or Skillet, Heat Oil And Saute Garlic To Golden Brown Color.
Add Roasted Red Chili Paste, Sugar And Fish Sauce And Stir Fry On Medium
Heat For 30 Seconds. Then Add Vegetables And Cook On High Heat Until
Vegetables Are Lightly Brown. Serve 4.
Beef & Mushroom Stir -Fry
1 lb. boneless tender beef
5 Tbsp Stir-Fry sauce
3/4 tsp crushed red pepper
1 large clove garlic, minced
3 green onions & tops
3 Tbl. vegetable oil
1/2 lb. fresh mushrooms, sliced
Cut beef across the grain in thin slices, then into
strips.
Coat with a mixture of 2 Tbl. stir-fry sauce,
red pepper and garlic; let stand 15 minutes.
Cut green onions in 1 inch lengths;
separate whites from tops.
Stir-fry beef in 1 Tbsp oil in wok over high heat, remove.
Stir-fry whites of green onions and mushrooms in
2 Tbl. hot oil in same pan for 2 minutes.
Add green onion tops, stir-fry 1 minute.
Add beef and 3 Tbl. stir-fry sauce.
Cook and stir only until beef and vegetables
are coated with sauce.
Serve over cooked rice.
Portabella Stir-Fry
1 Tbs. extra virgin olive oil
1- 2 Tbs. water
1 large carrot, chopped
1/2 yellow bell pepper, thinly sliced
1/2 red bell pepper, thinly sliced
1 zucchini, thinly sliced
5 oz. portabella mushrooms, thickly sliced
1 cup shredded coconut
1 oz. dried diced apple, mango, or papaya
1 Tbs. soy sauce
3 dashes tabasco sauce
salt and pepper (to taste)
1 tsp. toasted sesame seeds (optional)
Directions:
1. Heat olive oil and water in a large, deep skillet for 1 minute.
2. Add vegetables and sauté over high heat until softened (about 7-10 minutes), stirring frequently; add more water if needed to keep mixture from drying out.
3. Turn heat down slightly and add coconut, fruit, soy sauce, and tabasco sauce; stir well and season to taste with salt and pepper.
4. Transfer to a serving dish, sprinkle with sesame seeds and serve over brown rice.
Broccoli Stir-Fry
Servings: 2
1 1/2 pounds broccoli florets
2 tablespoons oil
2 tablespoons soy sauce
1 teaspoon cornstarch
1 tablespoon honey
1 teaspoon fresh ginger, grated
1 teaspoon chili sauce, or to taste
1/4 cup walnuts
Mix the cornstarch, soy sauce, and honey.
Heat the oil in a wok or sauté pan and stir-fry the broccoli for 5 minutes.
Add ginger and stir-fry for 30 seconds.
Add the cornstarch mixture and cook until the sauce is slightly thickened.
Add chili sauce and walnuts and serve immediately.

Simple Noodle Stir Fry
Ingredients
100g noodles
1 onion
1 red pepper
1 courgette
1 large carrot
1 tablespoon oil
soy sauce
Peel the carrot and onion and remove the ends from the courgette. Remove the seeds and stalk from the pepper. Then cut the vegetables into thin strips.
Cook the noodles according to the instructions on the packet.
Heat the oil in a wok and stir fry the vegetables for 3 minutes. Then add the noodles and cook for a further few minutes. Serve sprinkled with soy sauce

I think that the best thing about a good stir-fry is if it can taste good but can be made quickly! There may be a bit of prep work involved, but after that, you can have a great meal in no time that can serve a lot of people! Orange Chicken Stir Fry
INGREDIENTS
1 cup orange juice
1 tablespoon grated orange zest
1/4 cup soy sauce
1 teaspoon salt
3 cloves garlic, chopped
1 tablespoon brown sugar
3 tablespoons vegetable oil
4 skinless, boneless chicken breast halves - cut into 1 inch cubes
2 tablespoons all-purpose flour
1 cup bean sprouts (optional)
1 (6 ounce) package crispy chow mein noodles
DIRECTIONS
In a small bowl combine the orange juice, orange zest, soy sauce, salt, garlic and brown sugar. Mix well.
Heat oil in a large skillet or wok over medium high heat. When oil begins to bubble, add chicken. Saute until cooked through (no longer pink inside), about 7 to 10 minutes.
Add orange sauce mixture to chicken and cook until sauce begins to bubble. Add flour, a little bit at a time, until sauce has thickened to your liking. Add bean sprouts and cook for 1 minute; serve hot over chow mein noodles.

Try diced chicken breast, sweet and sour sauce, cashews, sesame seeds, sultanas, pineapple, onion and vegetables.

easy to make...
first thing you need streamed rice as must be cooked.
then add some soy sauce, clopped carrot, green pea and egg.
and add little water.
