I believe you are talking about the paddock, an enclosed area off most tracks where the horses are saddled and their equipment is checked, and the jockeys are mounted. Pimlico racetrack is an exception as far as location goes- the paddock there is in the infield at the center of the track. This is the only major track where that is the case, as far as I know. Horses start races by breaking from a mechanical starting gate- something that was invented during the 1930's. ( The photo-finish camera was also invented and first used during that time.) If you're talking about where they are held about minutes before a race, then it is a paddock, where they are saddled. If you are talking about a certain managerial decision for a horse or horses scheduled to run a certain race to be kept in a secured barn where no trainers, owners, or any such associates can tend to their horses, then it's called a detention barn.

Do you mean the starting gate? Where they put all the horses in then the bell rings and the doors open and then they start running.

Horses go a lot of places before a race... but that's the last place they're in before the race actually begins.
