Chili Relleno Casserole

Ingredients:
1 (4 oz.) can Ortega green chilies, chopped
1/2 lb. Cheddar cheese, grated
1/2 lb. Jack cheese, grated
1 can evaporated milk
2 eggs, beaten

Layer an oblong baking dish with 2/3 Jack cheese and 2/3 Cheddar cheese. Mix chilies, eggs, and milk. Pour over cheese. Top with remaining cheese. Bake for 1 hour at 350 degrees or until brown on top.

Corn Tamale Casserole

Ingredients:
1 (4 oz.) can whole green chilies
3 c. fresh corn or frozen
1/3 c. yellow cornmeal
2 tbsp. melted butter
2 tsp. Sugar
1/2-1 tsp. Salt
1 c. cheese, grated

Preheat oven to 350 degrees. Butter baking dish. Cut chilies in wide strips. Combine corn, cornmeal, butter, sugar and salt in blender. Layer 1/2 cornmeal mixture, chili strips and cheese. Top with rest of cornmeal mixture and put cheese on top. Cover with foil and bake 1 hour at 350 degrees.



Cheesy Chili Corn Casserole

2 (16 oz.) pkgs. Birds Eye sweet corn, thawed, drained
2 (8 oz.) pkgs. Velveeta, shredded pasteurized process cheese food, divided
1 1/4 c. milk
1 1/4 c. coarsely chopped corn chips, divided
1 c. chopped red bell pepper
1 (4 oz.) can chopped green chilies, drained

Heat oven to 350 degrees. Mix corn, 3 1/2 c. Velveeta process cheese food, milk, 1/2 cup corn chips, peppers and chilies until well blended. Spoon into greased 12" x 7 1/2" baking dish. Sprinkle with remaining 3/4 cup corn chips. Bake 50 minutes or until thoroughly heated. Sprinkle with remaining 1/2 cup Velveeta cheese food; continue baking 5 minutes or until Velveeta process cheese food begins to melt. Let stand 10 minutes before serving. Makes 10 to 12 servings.

This is sort of a casserole, but always a favorite in my family. Plus, it's easy and cheap.

It's a modified Shephard's Pie.

1 lb ground beef
2 cans green beans
instant mashed potatoes
shredded cheese


Take 1 lb. of ground beef and brown it. Mix in two packets of gravy mix with water. Through some spices in if you'd like. Cook thoroughly. Place on the bottom of a 9 x 13 pan.

Then make about 6-8 servings of instant mashed potatoes (which you can do at the same time as you are making the ground beef mixture)

Drain two cans of green beans and then put them on top of the ground beef. Then put the cooked mashed potatoes on top of the green beans. Top it off with some shredded cheese.

Throw it in the oven on 350 for about 20 minutes.... just to get it all warmed up together and to get the cheese to melt.

This is something I like to make on the weekend and then can just heat it up the whole pan one night, or individual servings throughout the week.

***Burrito Casserole Recipe***


For the filling:
1 onion, chopped fine
4 garlic cloves, minced
3 T. olive oil
2 1-pound cans black, pinto, or pink beans, rinsed and drained
1 C. tomato sauce
2 t. ground cumin
4 fresh or pickled jalapeño chilies if desired, seeded and chopped
1/4 C. chopped fresh coriander if desired



twelve 7- to 8-inch flour tortillas warmed
1 1/2 C. grated Monterey Jack (about 6 oz.)
guacamole and tomato salsa as accompaniments


Make the filling:
In a large heavy skillet cook the onion and the garlic in the oil over moderately low heat, stirring, until the onion is softened, add the beans, and mash about half of them coarse with the back of a wooden spoon. Add the tomato sauce, the cumin, the chilies, and salt and black pepper to taste, simmer the mixture, stirring, for 3 to 5 minutes, or until it is thickened slightly, and stir in the coriander.

Working with 1 warmed tortilla at a time and keeping the others covered, spread about 3 tablespoons of the filling down the center of each tortilla and roll the tortillas, enclosing the filling but keeping the ends open. Arrange the burritos, seam sides down, in one layer in a baking dish, sprinkle them with the Monterey Jack, and bake them, covered with foil, in the middle of a preheated 350°F. oven for 10 minutes. Serve the burritos with the guacamole and the salsa.

Makes 12 burritos, serving 6.

Sausage and Rice Casserole

Fry 1 pound of bulk pork sausage (drain off any excess grease)
Make 2 cups of Minute Rice (following the directions on the box)
Combine sausage and rice and add 1 - 2 cans of cream of mushroom soup.
Mix it all together and then put it in the oven on low in a casserole dish until everything is heated evenly.

Baked Ravioli Casserole
Similar to lasagna, but much easier!
Takes less than 20 minutes to
assemble and 30 minutes to bake.
Prep. Time: 0:50
Serves: 6-8

1 lb. ground beef OR ground turkey OR Italian sausage
1 bag frozen cheese ravioli
2 cups shredded mozzarella cheese
28 oz. jar spaghetti sauce


-In a skillet over medium-high heat, brown ground meat, breaking up as it cooks; drain; stir spaghetti sauce into meat.
-Spread a small amount of meat mixture in the bottom of a greased 13" X 9" X 2" baking pan.
-Layer 1/2 of the raviolis evenly in the bottom of the pan; sprinkle 1/2 of the remaining sauce over the raviolis; sprinkle 1/2 of the cheese over the sauce.
-Repeat layering once with remaining ingredients.
-Bake in a 350 degree oven for 30 minutes.

Sweet Potato Casserole

INGREDIENTS
4 1/2 cups cooked and mashed sweet potatoes
1/2 cup butter, melted
1/3 cup milk
1 cup white sugar
1/2 teaspoon vanilla extract
2 eggs, beaten
1 cup light brown sugar
1/2 cup all-purpose flour
1/3 cup butter
1 cup chopped pecans

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish.
In a large bowl, mix together mashed sweet potatoes, 1/2 cup butter, milk, sugar, vanilla extract, and eggs. Spread sweet potato mixture into the prepared baking dish. In a small bowl, mix together brown sugar and flour. Cut in 1/3 cup butter until mixture is crumbly, then stir in pecans. Sprinkle pecan mixture over the sweet potatoes.
Bake for 25 minutes in the preheated oven, or until golden brown.

Swiss Chicken Casserole! Love this!

INGREDIENTS
6 skinless, boneless chicken breast halves
6 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
1/4 cup milk
1 (8 ounce) package dry bread stuffing mix
1/2 cup melted butter
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
Arrange chicken breasts in the baking dish. Place one slice of Swiss cheese on top of each chicken breast. Combine cream of chicken soup and milk in a medium bowl, and pour over chicken breasts. Sprinkle with stuffing mix. Pour melted butter over top, and cover with foil.
Bake 50 minutes, or until chicken is no longer pink and juices run clear.

i call this "hangover over".--it makes 2,one to eat, one to freeze...
boil 1 box penne rigate in salted water with a splash of olive oil,drain.
brown 1 lb. of ground beef and 1 lb. ground sausage and drain.
divide meat and pasta between 2 casserole dishes.
to each casserole, add 1 can of drained sweet corn, 1 large can of crushed tomatoes, 1 small can of tomato paste, cheddar cheese, salt, pepper, and oregano to taste, mix ingredients well. bake at 375 for 40 minutes. remove from over, cover top of casserole with more cheddar cheese, bake until melted or desired degree of brownness.
