Hey I'm a vegetarian going on a raw fruit and vegatable diet and i need recipies. Dose anyone know any good ones?

oh an dI don't eat meat or eggs. I get plenty of protiens from nuts and beans.

And I'm not agianst eating meat or animal furs and blah blah blah I just want to go on a diet for my health.

Carrot cake
1/2 lb. small carrots
salt
5 eggs, separated
1 cup sugar
1 cup peeled almonds, ground
1 lemon
1 tsp. cornstarch
1 oz. rum
butter flour



Wash and peel the carrots, then grate them onto a cloth. Cover with another cloth and let stand for about an hour to dry. Whip the egg whites and sugar to a stiff meringue. Fold in the carrots, almonds, lemon zest, cornstarch, and the egg yolks one at a time. Add the rum, stirring gently. Butter and dust a cake pan and pour in the mixture. Bake at 350ºF for about 40 mins. Let cool before serving.

Minestrone vegetable soup from Italy
3 tablespoons olive oil
1 cup chopped onion
5 cloves crushed garlic
1 cup celery -- minced
1 cup carrot -- cubed
1 cup eggplant -- cubed (Or zucchini)
1 cup chopped green bell pepper
2 teaspoons salt
1/4 teaspoon black pepper
1 teaspoon oregano
1/2 cup fresh parsley -- chopped
1 1/2 cups cooked garbanzo beans (Or pea beans)
1/2 cup dry pasta
1 cup chopped fresh tomatoes
1 teaspoon basil
2 cups tomato puree
3 1/2 cups water or stock
3 tablespoons dry red wine
In a soup kettle, saute garlic and onions in olive oil until they are soft and translucent.
Add 1 tsp. salt, carrot, celery and eggplant.
(If you use zucchini, add it with the green pepper.) Mix well.
Add oregano, black pepper and basil.
Cover and cook over low heat 5-8 minutes.
Add green pepper, stock, puree, cooked beans and wine.
Cover and simmer 15 minutes.

Add tomatoes and remaining salt.
Keep at lowest heat until 10 minutes before you plan to serve.
Then, heat the soup to a boil, add pasta, and boil gently until pasta is tender.
Serve immediately, topped with parsley.

During the summer I like to mix blueberries, cut up bananas & strawberries & combine w sour cream.

Roasted veggies are delish - asparagus, tomatoes w a little evoo, s&p. Add to cooked pasta with fresh basil, garlic and mozzarella.

Picture an all-you-can eat salad bar, and make up salads w the ingreds you like. i.e. cottage cheese, beets, garbanzo beans, cherry tomatoes, broccoli, a little blue cheese dressing.

Strawberry & spinach salad w feta cheese.

Avocados are yummy & healthy. How about guacamole.

Halve a pear and fill w cream cheese & chocolate chips.

Cut up fresh fruit and add to yogurt - like a parfait -- layer the fruit and yogurt, top with nuts.

Cold soups like peach or melon.


Little Frozen Fruit Salads

1 8-oz package softened cream cheese
1/2 cup sugar
1/4 cup lemon juice
1/4 teaspoon salt
1-1/2 cups sour cream
1 pint blueberries
2 cups chopped peaches
1 cup seedless grapes
1/4 cup chopped maraschino cherries or strawberries
pineapple rings
lettuce
sour cream
maraschino cherries

Beat cream cheese, sugar, lemon juice, salt, and sour cream. Stir in blueberries, peaches, grapes, and chopped cherries.

Place paper liners in 16 muffin tins, fill with mixture, and freeze. Remove salad from freezer about 15 minutes before serving. Peel liners and allow salad to soften slightly. Place each salad on a pineapple ring resting on a bed of lettuce. Garnish with a dollop of sour cream and top with a maraschino cherry or strawberry.

I hope you have the dehydrators and all that stuff or else you are going to be having a hard time on that diet.

How old are you? If you are under the age of about 25; I would not recommend this diet. There is not enough protein in the diet.

I never understood vegitarians. They are usually against the killing of animals like cows which the death of has little effect on the world as they are bred by the thousands for the purpose of feeding; yet they have no qualms taking the homes away from billions of insects that effect the scope of nature in its entirety. Do they wish us all dead? Sorry, just get a garden and snack on things all day long.

Use a blender and several types of each to make fruit and vegetable juice?... I don't know, but it tastes awesome! Better than fruits-only or vegetable-only juices sold in stores and with a abundance of vitamins!...

CRANBERRY STUFFED PORK CHOPS

4 thick pork chops
1 (8 oz.) pkg. herb seasoned stuffing
1 med. onion, chopped
3 celery stalks, chopped
1 (16 oz.) can whole berry cranberry sauce

Preheat oven to 350 degrees. Make stuffing according to package directions, adding chopped onion and celery. Add cranberry sauce to mixture. Spread over third of stuffing mixture of bottom of shallow baking dish. Place pork chops over stuffing, bone side out. Spread remaining stuffing over chops. Bake, covered, for 45 minutes, remove cover and bake and additional 15 minutes, until lightly brown. Serve with steamed green beans sprinkle with slivered almonds and lemon juice.
Serves 4.
