Yes you can stuff it with Tuna or Chicken Salad as a nice refreshing lunch. Or scoop the inside of the tomato and combine it with italian seasoned breadcrumbs and asiago shredded cheese. Stuff each tomato with the mixture and drizzle some olive oil over the tops and bake on a cookie sheet in the oven at 400 degrees for about 20 minutes. Makes a nice appetizer or side dish.

Here's a mixed recipe for you. Prepare or go to your favorite Mexican restaurant and buy a couple of quarts of Mexican rice.

Then take several tomatoes and green peppers of the same approximate size. Cut the tops off the tomatoes and peppers and remove the pulp and seeds. Blanch the tomatoes and peppers for 5 minutes and let cool. Brown one pound of ground beef, chicken, pork or turkey and mix with the rice when cooled.

Stuff the mixture to overflowing into the tomatoes and peppers. The mixture will shrink and reduce in baking. Cover with cheese and the veggie tops and bake at 350F for 35-45 minutes. Serve with a nice salad and iced tea.
