A blessing is basically something good that happens to you, often considered granted by God. Liberty is freedom from oppression or indentured servitude.

The phrase refers to equality, inalienable rights, opportunity, etc. Basically, it's liberty (a free society) as compared to the monarchy they were separating from.

In a monarchy the leaders are born and hold on to power through oppressing the pheasants. In a republic the leaders are elected for short terms and hold on to power by doing what the pheasants want.

An example of a "blessing" is that no two democracies have ever fought a war against each other.
